hey all-- I'm heading to Lexington for thanksgiving with the in-laws and was just told that I will be cooking the bird. Since my lexington family sticks to frozen butterballs, I was wondering if anyone knew of a local farm where I could order an organic turkey--

I didn't realize that lunch is FIFTY dollars more then dinner! Please let me know if you guys think its worth it-- it would be tough for us to swing it but we could squeak by. How expensive is the wine pairing?

Smoked Turkey carcass

That is what I salvaged from yesterday's feast-- any ideas on what to do with it?? am afraid a turkey vegetable soup like I usually do will have too intense a smokey taste--

I have a bone in ham from Baczynzky (East Village Meat Market--) Kurowycky used to give out a xerox explaining how to heat the ham but EVMM does not-- I seem to remember wrapping it in foil and heating at 300 for a few hours-- am I right??

A Silver Palate Lemon Chicken question:

I have made the lemon chicken recipe from the Good Times Cookbook several times, which consists of marinating chicken parts in lemon juice and then dredging them in flour and seasonings before baking them. (I think they also get sprinkled with marinade and brown sugar)-- I am seeing a new version on the internet that involves frying the chicken for 10 minutes BEFORE putting it in the oven-- is this really better? its alot more trouble--

Fresh Cranberry beans

I bought some beautiful fresh beans at the farmer's market-- I need a good and simple (BASIC) recipe--also not sure of cooking times etc!

9 hour oven baked ribs

Kept them uncovered the whole time. When I put on the sauce I jacked oven up to 500 for 10 minutes-- finishing under the broiler would have been good too, mine is just tempermental.

Okay, I rubbed my 4 racks of st Louis ribs with a version of Bittman's rub (salt, sugar, cumin, paprika and chile powder) and then the next day put them on foil lined cookie sheets, into the oven at 180 degrees for 9 hours! sauced them a little (with bone suckin sauce) at the end and jacked up the temp to get a glaze.
They were AMAZING-- moist, incredibly flavorful-- tender but not mushy. The best ribs I have ever had.

okay, I have 4 racks of st louis ribs-- 10 pounds in all. I am planning on making a rub with cumin, paprika, chili powder and salt and pepper. and sugar. My question is-- should I put the rub on tonight and let it sit over night in the fridge?

I have been a greenmarket fan for a good 10 years, and now that local stuff is coming in I want to branch out and try some new vendors. I get great lamb from 3 corners farm, eggs from Violet Hill, asparagus from cherry lane, greens from Windfall Farms, chesse from Cato--what GREAT things am I missing out on??

kind of combining 2 recipes-- tomatillios, cilantro, poblanos, onions, garlic...the big difference between the 2 recipes is cumin. one has a big teaspoon, the other none. Need some advice on which way to go!
