Well, we ordered our food and when it was ready they placed it on the table along with our glass of wine. We never received any more service. They then brought the bill without asking ever if we wanted more wine (my glass was empty half way through the meal) and never offered us dessert or coffee which we were planning to order. We mentioned the fact that the owner missed out on sales due to the lack of table service and instead of expressing concern, interest or an apology she said that we had several people assigned to our table to serve and she did not see what the problem could be. Is that specific enough for you?

Although I like Bibas the "hottest" restaurant in Sacramento for true foodies in the area is The Waterboy. That is where all the chefs in Sacramento eat according to the Sacramento Bee.

I loved the food and the setting at Albion River also. I would say it is the best I have had in Mendo area.

I had the worst service I have ever had at Mendo Bistro and when we complained to the manager she was even more rude than the waitress. I liked the food but won't ever eat there again due to the attitude of the wait staff and management.
Best knife sharpener??
I have a Chef's Choice and you can't beat it for the convenience, speed and ease of use. I have had it for at least 3 years and don't notice any damage to my knife's edges. Before I had ceramic rods and a steel,it worked fine but I never had the time to really get them razor sharp. It just took longer and was a bigger hassle. The biggest problem now is sometimes the knives are just too sharp for a clutz like me in the kitchen!

It sounds like the Polish wafers would be the closest to what I need. I would guess that there is a Polish grocery in Sacramento but I don't know where. Anyone know of Polish grocery stores in Sacramento? Thanks for the ideas.

Every year around this time I make panforte and most recipes call for edible rice paper or oblaten wafer in the bottom of the pan to keep the panforte from sticking. Every year I can't find them and I make it without and it sticks. Does anyone have an idea where you can get these products or an alternative to keep the panforte from sticking to the pan? I have tried parchment and greasing the pan and foil with minimal luck, it just sticks to them. I live in the Sacramento area.
Satsumas
Definitely you need to know where in California the satsuma are grown. In Japan they grow them on hillsides where there is good drainage and the soil is not too rich. Satsuma also need cold nights and warm days. This leads to good acidity and high sugar content. If you buy satsuma from the flatlands of the central valley or from a coastal climate where there is not enough heat or chill they will not be as good. Some of the best mandarins in California are grown in the Sierra Foothills. That is why Auburn has the mountain mandarin festival every November. But you cannot tell if they are good by looking at them, you need to taste! 2 mandarins can look exactly the same but taste completely different.
