Soba Salad dressing recipe?

Am obsessed with the cold soba salad these days. I love the versions at Soba Nippon and Restaurant Nippon - both in midtown Manhattan.

Any ideas on how I can replicate the dressing at home? I can do the noodles, the poached chicken and the veggies, but the magically delicious dressing eludes me - help!

Cake Chef, hands down. The fillings are fresh, fresh, fresh, the buttercream forsting and ganache are to die for, and the prices are incredible, too.

Grocery or Saul?

Going out in Brooklyn on Saturday and have booked both Grocery and Saul. Have not been to either and need help deciding which reservation to keep. What matters to me most (besides the food!) is service and noise level. When I'm splurging I want impeccable service and a quiet spot. Thanks!!

Enoteca Maria - amazing

Had to post about my meal at Enoteca Maria in St. George. We went on a night when they were cooking Sicilian and we left full and delighted! amazig pasta con sarde, studded with raisins, pine nuts and briney sardines served over bucatini. Clams in a spicy red sauce and cheesy, aromatic veal spedini. I wish I could remember exactly whihc wines we drank - I had a crisp, dry rose and my husband had a delcious Montepulciano.

The room is lovely and was pleased to see it very full. Service was a tad harried, but I blame that on the fact that we went on a Friday night after their Wednesday review in the Advance.

Cannot wait to go back and see what the other chefs can do.

so much leftover chili - what to do with it?

I love to make a chili pie with leftovers. I warm the chili in a LeCruset, sprinkle some shredded cheddar or pepper jack on top, then pour cornbread batter over this mixture and bake according to the cornbread directions. I like homemade best, but in a pinch I use Jiffy cornbread mix. YUM.

Am partial to Middle Eastern, Ethipian, and any casual French bistro type places. Saw the sushi postsings, but my weekend getaway companion is pregnant and off sushi for now.

Why did my rice pudding fail?

I always use my grandfathers ercipe and it has NEVER failed. V. simple, too. One quart whole milk, one cup long grain rice. Combine in a heavy bottomed pot and cook over low heat, stirring often, until mixture thickens - about 30 minutes. Once ixture starts to thicken, add sugar and one tablespoon vanilla and a shake of cinnamon and concinue cooking to desired consistency. Takes about an hour in total and is nce and creamy.

Favorite Things to do with Ground Turkey

Cooking Light online has a wonderful recipe for picadillo that calls for ground chicken - I always use ground turkey instead. Very simple and flavorful - uses bottled salsa, almonds, raisins. V. tasty and good mid-week cooking.

I always see a very full pakring lot when I drive by the 1-9 Seafood restaurant on (natch) 1/9. I'm curious to know what it's like - is it pan-Asian cuisine that specializes in seafood? Is it sushi? Anyone who has been, please do let me know some details! Thank you!

Black and White Cookie

Had given up on Black and Whites for awhile as they all seemed subpar - too dry, flavorless icing, etc. On a whim I bought one from The Cake Chef on Staten Island and boy oh boy am I glad I did. Light, rich and moist cake, lightly perfumed with vanilla. Soft, choclately icing one one side and creamy vanilla on the other. You could taste how fresh it was - no chance this cookie had been sitting out for days like so many others out there.

My faith in the Black and White is renewed - long live the Cake Chef! If you still have room, go for a peanut butter brownie bite.

Looking for a low(er) fat scone - is the search worth it?

The Joy of Cooking has a very nice low fat scone recipe that uses buttermilk. They are "drop scones", so no rolling, etc. I love them and make them often with a variety of fruits and spices right now am on a dried cherry kick, but I often use fronzen blueberies and dried cranberries and cinnamon. YUM.

Carol's Cafe in S.I.?

I really enjoy Carol's! My favorite dish is her pasta with lamb and peas. It sounds very simple, but the flavors are just marvelous. and, as an appetizer she does a spicy fried calamari that is phenomenal - truly not your average calamari appetizer.

You can go to pub for a less expensive menu...

Chinese in Staten Island (don't say Jade Island), and other yummy ethnic...

Taste of India II on New Dorp Lane is delcious, really very good. I just went to Pho Mac the enw Vietnamese restaurant on Richmond Rd and was blown away. Incredibly good, fresh, our server was so funny, kind, and helpful. Plus it is BYOB, so I felt like we stuffed ourselves for very little money. I have heard good things about Island Roti Shop on Victory Blvd. and Wright Taste on Bay St., but Jamaican food is not my personal cup of tea so I haven't been. There are also some really yummy taco places on Stapleton.

I have yet to find amazing Chinese on S.I. (and I'm a native S.I. gal), but if I have a craving and can't make it into Manhattan I go to Sing Bo on Victory Blvd. just near Manor Rd.

Also on Victory between Slosson and Clove Rd. is Tokyo Sushi Restaurant. They just remodeled the interior so there is more room and it has a nicer atmosphere, but the sushi is as excellent as ever.

Staten Island Italian....

Oh, thenyes, Paolucci's would be perfect - from the red vested waiters to the mouantin of tender chops. Very chatty place, but not loud - if that makes sense. You just can tell the other tables are havig a nice eveing as well. you can also pop into Three Lounge, two doors away for a nightcap if you're having THAT good a time!

Staten Island Italian....

I haven't been to Bondi, but Paolucci's on Forest Ave. is just lovely. I went with my husband and one other couple. We had the warm antipasto - says it is for two but it easily served four - and then gnocchi, pork chops, steak and pasta with broccoli rabe. The pasta was al dente, the meat was succulent and we had oodles of leftovers. The wine list is not spectacular, but we had a nice Montepulciano that served us all well.

For a more upscale Italian meal, I would try Angelina's. could be the best Italian on the Island in my opinion.

It is at 817 Castleton Ave. on Staten Island - the number 46 bus from the ferry drops you off practically right in front. Tell the bus driver you need to get off at Davis Ave. and Castleton. Probably a ten minute bus ride...

Nurnberger Bierhaus vs. Killmeyers

I made my belated first visit to Nurnberger Bierhaus on Staten Island on Friday night. It was fantastic, really. I had a fasntasic Ziegenurschnitzel (veal with a red pepper sauce), my hubsand had a warm potato skillet toppped with jaegerscnhitzel and our companions ahd smoked porkchops and an amazing roast pork dish. The food was light years better than what we have had at Killmeyers. Whereas the Killmeyer's dishes seemed rather cafeteria like, Nurnberger was incredibly homey and warm.

And the beers? Don't even get me started. My husband had a Dinckleacker Dark that made him swoon.

Totally worth the ferry ride. YUM.

ZEST - Rosebank

Had a lovely supper at Zest on Bay St. in Rosebank on Friday night. They've been open for abotu a month, I think and this was our first visit. Eclectic mostly Mediterranean menu. My sister and I both had a beet, arugula and walnut salad to start. Our husbands had grilled squid and beet soup. Mains were an outstanding hanger steak served with fries, seared mahi mahi and a grilled chicken paillard with braised escarole and a gratin of potato. The service was elegant and polite and the wie list was nice too.

The wner proudly shoed us the outdoor area - I cannot waitt o eat there when it gets truly warm.

If you are on S.I. do check out this new gem - and if it's too crowded, you can pop across the street to Bayou!

Cafe Botanica

Had dinner at Cafe Botanica on Satyrday evening. It is lcated within the grounds of Snug Harbor on Staten iland and it was fantastic! Their menu is a three course prix fixe for $42.50 a person. My husband started with seared scallops on a bed of beet risotto, followed by braised short ribs with a mini cheese souffle - pumpkin sorbet for dessert. I started with a salad with candied walnuts and maytag blue cheese with the most delicious lemony dressing. My main was a cider glazed pork chop with spaetzle, braised red cabbage and wild mushrooms. My sweet was an apple/walnut tarte tartin. The dining room is small, quiet and gorgeous (red walls, crackling fireplace) and the service was totally professional - elegant without being stuffy.

Really, if I could go back tomorrow, I would. In fact, Cafe Botanica might be edging out Aesop's Table as my favorite Staten Island restaurant.
