Looking for a low(er) fat scone - is the search worth it?

Cook's Illustrated is a good source for reliable lightened recipes. I have made great scones from one of their books-can post the recipe if you still want it. Probably not as low in fat or calories as Cooking Light.

ratio of coffee to water?

So, what did you learn? I have always read 2 tablespoons ground coffee per (6oz) "cup" of water. But I just bought a coffeemaker, and the instructions with it call for 1 tablespoon per cup.

Vegetarian hot dogs

The most satisfying non-meat dog in NYC is the carrot dog at Willie's Dawgs on 5th Ave in Park Slope. The texture is obviously not just like meat, but the taste is much closer than any meat substitute I've tried-packaged or at a restaurant. I'm not sure how but they brine it just right. So delicious.

Baked goods without yeast or other leavening - suggestions needed!

Thanks all for the encouragement! Love these ideas.

Baked goods without yeast or other leavening - suggestions needed!

Fantastic! I love the idea of giving lightness and structure with eggs! Not sure if I can find cream of tartar locally, but it looks like vinegar may be a passable substitute. I didn't mean to limit to crackers; that was all I could think of.

Yes, sourdough sounds great. We are trying to make the starter now. I don't have an allergy or anything like that, just am doing a challenge to eat local foods in September. I am lucky that a lot of fruit, veg, beans, meat and grains are grown in the area, but I cannot seem to locate packaged yeast or baking soda/powder collected/grown/manufactured in the area. Seems like a good chance to expand my repertoire to try sourdough and make things with flour other than leavened breads and cakes.

Have any great recipes for flatbreads or crackers that do not call for yeast or baking powder or soda? I'm interested in sweet or savory. Are there cookbooks that specialize in this?

HELP dessert for a wedding

What should I make to serve for dessert at a fall wedding? I'll be baking dessert for a few dozen people, and while I won't be making anything so formal as a wedding cake would like to make something special and festive. Not sure about how they will be served, so rustic desserts like crumble are out but cookies, bars and other things that would be easy to eat out-of-hand. Please, I would love any suggestions.

Any experience baking mini pies?

I want to try making pies in cupcake tins. Any suggestions on crust recipe to use and how to modify baking time and temp from standard size pie? If you have made (or eaten) this kind of single-serving pie, do you recommend it?

Favorite rice crispy treat recipe?

I like to mix dried cranberries and raw pumpkin seeds into the traditional recipe.

Accompaniments for chicken pot pie?

Oh, I'd never have thought of that. I don't know about this time (gathering ingredients) but I want to try it.

Accompaniments for chicken pot pie?

I was thinking a buttermilk dressing--this confirms it!

Accompaniments for chicken pot pie?

Crisp green salad sounds like a great complement. Thanks!

Accompaniments for chicken pot pie?

We are having chicken pot pie tonight. What should I serve alongside, and to drink?
