· Sara Baer-Sinnott, Oldways executive vice president and co-author of The Oldways Table

· Paul O’Connell, chef and owner of Chez Henri in Cambridge, MA and contributor to The Oldways Table

Dun and Sara will talk about the history of Oldways, a non-profit food advocacy group based in Boston and their active roles in the food landscape of today. During the discussion, Paul O’Connell will create chipotle aioli based on his recipe in The Oldways Table. Dun will also guide attendees through a tasting of olive oil, balsamico and hard Italian cheese, while Sara will offer samples of the exotic culinary delight known as dukkah.

BACKGROUND: Oldways is an organization that is deeply entrenched in the food world and has worked with every culinary luminary out there, from Julia Child to Bobby Flay. Oldways has influenced restaurant menus and home kitchens around the world through its introduction of the Mediterranean Diet in the early 1990’s to whole grains in more recent years with the Whole Grains Council. Focusing on sustainable and nutritious food, Oldways’ message is about the pleasures of the table and the wisdom of traditional food ways.

BOOK SYNOPSIS: The Oldways Table has 90 essays, 100 recipes, and reads like a who’s who of the food world (Lydia Bastianich, Elizabeth Luard, Barbara Lynch). Fine dining in Turkey

Haci Abdullah and Korfez are both great recommendations. Korfez has a gorgeous view. Another restaurant with a really beautiful view (if somewhat mediocre food) is Feriye.

Kaymak cheese shop?

This is a tough one - does anyone know a cheese shop near the Besiktas market (in Istanbul) that sells Kaymak cheese?

I would really appreciate any tips!
