ALTA COCINA IN SOUTH MIAMI?

I'm planning on going there this Saturday with some friends to check it out. I was wondering if anyone had been there yet and had anything to report. I'll be sure to post on it this weekend either way.

New Restaurant South Miami

I went last Saturday to Alta Cocina and the food was excelent. The fusion del rabo was amazing, the sea bass was out of control, the short rib app and calamari was very good too. Nice spanish wine selection, we got Prima d.o. toro ,spain for $40 that was nice wine. The dessert was very good, the buttermilk panna cotta and bananas beignets we loved. The owner are young and they need a strong FOH manager.

chocolate Graham Cracker Crust:

10 oz graham cracker crumbs
5 oz butter (melted)
2 oz sugar
3 tbsp cocoa powder
mix all together

What to pair with ginger ice cream?

you can pair with apple beignets or apple fritter. Something with apple or pear.
Warm apple compote, apple tart tatin ect.

cantaloupe ice cream recipe!

for cantaloupe ice cream:
First make ice cream base( vanilla creme anglaise):
16 oz heavy cream
16 oz milk
2 tbsp vanilla pure extract or 1 vanilla bean
1 cup sugar
12 egg yolks
In a pot pan bring milk , heavy cream and vanilla until start to boil,
mix sugar and yolks and pour few hot cream and temper the egg yolks mixture,
return to the stove and in low heat stir until the mixture reaches 160 F.
Let cool ice cream base in ice bath. when is cool puree cantaloupe and add to the ice cream base. try when you think the have the good flavor you want.
