Uncured green olives
Anyone know where I can find uncured green olives in the Dallas area?

A 1945 US Navy Cookbook. For the times you need to serve 100s.

An old Crisco book from the 30's.
Actually I went to a book show a few weeks ago and picked up about 15 books.
I love looking at old books to see how people cooked in the past.
curing olives
I know this may not be the traditional way but I always crack my olives first. Place them in a plastic bag so the juices don't make a mess and crack them with a brick.
Then brine them for about 2 weeks changing the water each day.
When done place each in a quart jar with 1 clove garlic, 1/2 tsp crushed red pepper (optional) and 1 bay leaf.
Store in cool (not chilled) place.
I've never seen them wrinkle.
