Paitan Ramen Broth - what is it?

I've been reading about the paitan broth from Totto Ramen. What exactly is it? How does it differ from Tonkotsu broth?

Does it refer to "white soup" (in Chinese)?

I know that Totto Ramen uses chicken bones instead of pork bones. Is that the difference?

Terakawa Ramen

Went recently and found them to serve a pretty decent bowl of tonkotsu ramen. Tried almost everything on the menu (which isn't much) with a few friends - the ramen stood out, everything else was average/passable/decent. As mentioned above, the curry rice that comes with the combo contains no meat.

Overall, I came out pretty satisfied. It really is the anti-ippudo - not much in decor or "cool-ness" at all.

Another thing I noticed during my meal was that almost everyone there was Japanese (over 4-6 groups of various sizes).

I just want to second your choice of Giorgio's. Great place with excellent service. I personally like the scallop dish, and always order a small mac and cheese.

Upon reading the label, I think it's the entire duck liver (foie gras de canard entier). Doesn't change anything right? I think I will pick up a baguette tomorrow and pair it when some rose petal confit that I also received.

I received a jar of foie gras from a friend who just came back from France.

It looks like it's vacuum sealed, and I've kept it in the fridge for a couple weeks.

What's the best way to enjoy this? I think it may have been semi cooked.
