Ice Machine - Which makes the ideal ice?

If you are looking for a commercial ice machine the Hoshisaki Pillow Cuber is my favorite. Okay, the ice is somewhat pillow shaped but not hollow and quite clear in my experience.

New Year's Cocktail

I had a cocktail party pre-Christmas and served a champagne cocktail consisting of a decent sparkling white wine (I use Christalino from Spain) with Knudson's sparkling soda, cranberry flavor.Any fruit flavor would work. Fill the flutes to about a third then top with the colorful soda.
It's nice and light for those who don't want to drink liquor.

Any tricks to melting a sharp cheddar for mac and cheese?

You might try making a thin bechamel sauce and crumbling/shredding the cheeses into the warm white
sauce to melt. I've tried this with sharp cheddar
and it turns out fine.

Halibut cheeks recipes needed

You don't want to cover the amazing subtle flavor of the fish with strong flavors like garlic or rosemary. Halibut cheeks are such a treat!
I would salt and pepper lightly and sear in a hot pan. Then a sqeeze of lime... served with rice and steamed aspragus. Mmmmm

Snack ideas?
We are having a smoked fish plate, salmon and mussels. Some good cheeses and quality cracker bread. I'm thinking rumaki and/or bacon wrapped shrimp as a warm dish.

non-chowish potluck dish

Layered corn bread salad. Sounds odd but tastes amazing, also, a cold dish, no burned commuters!

Bake a Jiffy corn bread mix as directed (prepare dish the night before.) Mix 11/2 cup of best Foods mayo and 1/2 cup dill pickle juice until smooth. Crumble corn bread into 13x9 inch casserole dish, layer remaining ingredients in order and refrigerate over night.

16oz kidney beans, drained 1C tomato, diced
1C green pepper, diced 1lb cooked, crumbled bacon
1C green onion, chopped mayo, dill dressing

I hope you get to try this sometime, it really is a surprise!

Christmas Cocktail Party

A good friend and myself are co-hostessing a holiday cocktail party at my house.

We have a good champagne cocktail recipe and a seasonal micro-brew in the keg-r-ator. We expect roughly 20 people... I was going to make rumaki and bacon wrapped shrimp. We're also doing smoked salmon, mussels, and some really good cheeses.

What do you think? Too much bacon? Do you have a favorite hors' deurve? (How about that spelling? sorry:))

Large Yield Cookie Recipe Needed

I tried the Mexican Wedding Cake recipe in December 2006 Bon Appetit. They are a cookie, not a cake...
The ingredients include pistachios and dried cranberries they have a nice holiday theme, so to speak.

So festive and fun to make. The recipe could easily be doubled. Check for it at epicurious.com.

The version I have has 1 part orange liquor, 1 part cranberry juice and four parts sparkling white wine.

Any other variations out there? Any champangne cocktail recipes to share?

kfc snackers

There are food "horror stories" in even the finest establishments... believe it.

I drive a delivery truck and only eat fast food
when I have no other choice. However, I do like the
original snacker, easy on the sauce. They are super
convenient when one has to eat and drive.

So What are people making tonight for Dinner?

Black Forest Ham that didn't get used over the holiday. I made a glaze with maple syrup, brown sugar and a spicy cajun seasoning mix stirred in. Also having chanterelle, pine nut risotto and green peas. Alas, the peas came from the freezer.

Bombay v Sapphire

As a die hard Bombay Sapphire drinker, I was surprised when my partner pulled a blind taste test on me. I picked the Bombay Dry over the sapphire. He's happy cause it's less expensive. Upon reading the label there are only two more herbs in the Sapphire than in the Dry.
Any input?

We are so spoiled here in the NW. This morning, hubby cooking again. Frittata with yukon golds, fresh picked chanterelle mushrooms(we pick ourselves for our own use) and smoked fontina cheese. and again with the mimosas!

Saturday dawned rainy and windy in the Northwest. It's a great day to stay in and cook.
Lucky for me my husband was thinking the same thing!
He made a version of eggs benny using left-over challa rolls from t-giving and a blender hollandaise sauce. I had to poach the eggs, being the queen of the ovum. Also Mimosas using fresh o.j. and a spanish sparkling wine that I'm crazy for.

I want to make a pecan pie for Thanksgiving.

Fresh Tomatillos

If you live in a gardening climate I recommend growing tomatillo. It is a pretty plant and yields a gob of fruit! You can make salsa and verde recipes. They are very versatile.

Question about brining

When brining a turkey 14-16lbs I leave it in for 8 hrs. From what I understand while the water infuses with the meat it leaves behind all the flavorings. I brined my first bird a few years back (see food t.v. alton brown?) and it was fantastic. It continues to be a big hit, I don't cook turkey any other way! No stuffing, just aromatics!
