Cut the Cheese! [moved from Home Cooking]

my favourite cheese is a blue cheese rom the pyrennese called zelu koloria. I also really really like beaufort, beenliegh blue, wigmore and fleur de marquis.
When I used to work in a cheese shop I found he hardest cheese to cut was a bright orange one that looks like volcano rock on the outside called Mimolette.

mine for now is wigmore (soft english sheeps cheese) with discovery apples.

how do I become a better cook?

I can cook a few dishes quite well at the moment, nothing fancy. I am good at making creamy dishes; pasta with creamy sauce and prawns, steak with a creamy cider sauce, etc. and I make an alright thai green curry. But I am very competitive and I hate not being the best cook I know. I am quite good at following recipes but get a bit stuck for ideas when it comes to trying to come up with recipes myself.

please provide me with some tips to becoming a better cook.

la tacas is a chain tapas restaurant. the food is tasty and they sometimes have salsa dancing there? also there is a place on charing cross road that is called bar brazil or bar salsa or something that looks good for this also.

okay well my first recommendation would be for crystal kebab shop on holloway road. it is widely regarded as the best kebab shop in all of london. The staff are friendly, the chicken shish are delicious and cooked over a charcoal grill and the hellumi kebab is the best I've ever had.

I thought this would be a good thread for all sorts of recommendations for london.

Good red wine to go with a cheeseboard?

thank you so much for all the suggestios guys, I posted this on yahoo answers too and someone strongly recommended a cotes de bourg or blaye from 2000 or 2005 so I think I will probably go for one of those. Although I did get a free bottle of red today (los vilos cabernet sauvignon 2005 from chile).

main - thai green chicken curry with rice

Good red wine to go with a cheeseboard?

I am giving my boyfriends parents a cheeseboard for christmas, it will consist of a mild herby soft sheeps cheese (fleur de marquis), a salty goats cheese (selles sur cher), a gruyere (comte), a sweet hard sheep (berkswell) and maybe a washed rind too (either epoisses or camembert calvados). Can anyone think of a good red wine that would go with this as a whole cheeseboard?

thankyou, for dinner yesterday I had a mascarpone and smoked trout pizza and then a tomato one with chicken fried in garlic and red wine and then parmesan on top with sliced tomatoes. Both were delicious.

as far as I am aware cheese isn't kept unrefrigerated for months or years at all. I worked in a cheese shop for a short while and we would store cheese to mature them and they were all kept in large fridges downstairs at 9 degrees.

I am trying to plan my Christmas cheeseboard at the moment.
I am thinking of comte, manchego, caprini fresci, zulu koloria, morbier, fleur de marquis, camembert calvados and epoisses with quince "cheese" and walnuts.

I remembered another delicious sheep cheese, wigmore. so good when it is ripe, especially with cox apples.
