Looking for Best Destination Restaurants in VT, NH, ME
Home Hill Inn, in Plainfield NH, (about 30 minutes from Dartmouth College) is an out of the way place to dine that you can spend the night in. We live locally and since we have never stayed there I can't vouch for their accommodations but their chef is doing some of the most innovative and delicious cooking in the Upper Valley. Cannot recommend it enough for dinner or Sunday brunch.

Simon Pearce is up and running, with full food service. Please reconsider them for your rehearsal dinner as they have mad a Herculean effort to reopen for foliage season. The Parker House Inn and Restaurant, located next to Simon Pearce has also reopened as of last week.

Help! Stinky cheese is ruining my fridge!
Since I am the only stinky cheese eater in my family, I usually have cheeses for a long time. I wrap them in wax paper and store them in an airtight plastic container, like any one used for food storage. There is no odor at all until I open it to pull out a cheese and that usually clears the room!

any secrets to a great tuna fish sandwich?
I have not read this post in a very long time so I am sure that my "discovery" will be old news to many on this board. My new absolute favorite secret to a great tuna sandwich is the tuna. After years of water-packed albacore I have recently discovered Tonnino wild caught yellow fin tuna fillets in olive oil. Another favorite is Crown Prince natural yellow fin tuna in olive oil. I don't know how I endured the sawdust-in-a-can tuna that I used to like so much. I feel like a born again tuna freak.

Let me clarify: my point, although muddied by my own statement, is that almost everything is cheaper to make at home and THAT should not be a factor in judging restaurants. I threw in the statement about some of us being able to make meals that taste better as an after thought. I definitely expect the food to be better than my own when I dine out and as a fairly accomplished cook, I am frequently disappointed. That is why I love Neptune; they prepare seafood in creative and delicious ways that I wouldn't do at home. You are certainly correct that if they make you feel like you are doing them a favor, then you should not eat there. I have never had that feeling there and I go there regularly.

Vermont is an amazing state, with people who have been helping each other for the past 2 weeks, shoveling and gutting and building and feeding. There is a huge effort to get up and running for the foliage season and they have already made heroic leaps and bounds toward that end. Many of the inns are offering special rates to encourage people to come. Please make calls before you decide not to come because since the cameras reported on the devastation, most have not returned to report on the unbelievable progress that has been made. And remember, the trees will all still turn red and orange and the beauty that has always characterized Vermont has not washed away with some of the roads.

I would agree with the Inn at Weathersfield and the Parker House Inn (that would be my first choice) but I would stay away from the Juniper Hill Inn. I would add the Quechee Inn as an option.
B&G Oysters - Are you kidding me!?
I was at Neptune Sunday night and had a great meal - hamachi and salmon crudo and fish fish tacos. The waiter suggested a wonderful wine when our first selection was unavailable. It was pricey but worth every penny. We go there frequently and are never disappointed with the food or the service. The 90 minute wait suggests that others feel the same. I also enjoy the cheaper lobster roll at Legal but not nearly as much as the plumper one at Neptune. We can all make meals at home that are cheaper than those we eat in restaurants and some of us can even make meals that taste better but that should not be a factor in judging restaurants.
Can one find lobster rolls in Vermont?
Yes, sadly I agree. Get ready for a road trip.

I'm not sure what a "foodie place" is either but Cloudland Farm is not the place that comes to mind. Sustainable? Yes. Localvore? Yes. Fantastic and creative use for the farm? Yes. I have been there several times and I will continue to go because I support the whole concept that they have created but the food has never been fabulous or memorable to me. I see it as more of a way for locals to go and have a great time and support the venue while eating good food.

Continuing on the Woodstock track, be aware that there are not many great restaurants in the immediate vicinity. Cloudland is good but not a foodie place Simon Pearce is very good. Barnard Inn is good. There are lots of small local places for a great lunch - Village Butcher, Stella's in Hartland, Allechante in Norwich. If you are up for some beautiful driving, there are many places to eat that are destination restaurants. Home Hill Inn in Plainfield is a great place to eat - 30 minutes. Hen of the Wood - hour and 15. Burdick's in Walpole NH - hour.

Sensing goodbye, hello Aragosta!
Fairmont Battery Wharf finally decided to make some long-needed changes at their wonderful hotel and put in a new restaurant. This new venture will be led by the acclaimed chef from the Wauwinet in Nantucket. As someone in the neighborhood, I look forward to the changes and I look forward to a bar and restaurant that I draws me in and keeps me coming back for more. I hope with the changes, they replace the old bartender or give him a lesson in how not to drive customers away. When you enter an establishment through the bar, the first impression you get from the staff there is pretty important. I don't need to be kissed up to but I do expect to be welcomed pleasantly and made to feel like I want to stay - particularly at the prices they charged for their bevs. As someone who prefers to eat at the bar with friends, the bartender is as important as the chef. (well almost!) I am really looking forward to the opening of Aragosta next week.
Help with pork collar
I ended up cooking it like a pork shoulder and it was the best roast pork we ever tasted. I started with Kurobuta pork from Snake River Farms and that probably made all the difference in the world. I plugged it full of garlic cloves and sage (which I read somewhere online) salted and peppered it and put it in the fridge overnight. The next morning I slathered it with Grandma Alma's Sweet Hot Mustard (http://www.barnappetit.com/2009/04/almas-mustard-special-mustard-from-very.htm ) and cooked it , uncovered at 250 degrees for about 8 hours. I sliced it thickly and served it with the rest of the heavenly mustard sauce, cole slaw and mashed potatoes. It was the uber comfort food meal and it absolutely melted in my mouth. I don't know it if was the cut of meat, the brand of meat or a combination of both but I take very little credit for the deliciousness that evolved. Pork collar is my new favorite cut of pork and I can't wait to play with it on the grill.
Help with pork collar
Please advise me how to cook pork collar. I thought it was treated like a shoulder but after reading about it online I am afraid that it is best served cured, like a fine ham. If possible I would like to rub it overnight then cook it all day in a low oven but I don't want to ruin this cut of meat. Thanks.
Where should I buy a ham?
Is a collar the same cut as a butt or shoulder and if not, is it cooked in the same way - low and slow?

Christmas Brunch in Lieu of Dinner
Since it is Christmas and you are bucking years of tradition, you want the meal to be a huge success, with plenty of choices. I like what you have chosen to serve but I would offer a broader selection, more of a Smorgasbord. I love the idea of a platter of sausages or smoked salmon and bagels, or some other bread as an alternative to your sweet pastry. Maybe serve a sweet, creamy cheese to go with your fresh fruit, like goat Brie or Humboldt Fog or a bowl of Greek yogurt. Another great brunch dish, that is made the night before and popped into the oven, is baked French toast. It can be eaten warm or at room temp and it is always a crowd pleaser. Good luck!
Potatoes please
I made Potatoes Anna and they came out great. They were a perfect side dish for the outrageously good Brandt Beef rib roast. Roasted root completed the perfect trinity. It was a memorable meal.
