Mango kills corn starch's thickening

I bought the tapioca starch. I had two mangos and I made the dish twice. The starch thickens immediately. I put in the same amount as corn starch and it became like glue. Then I added the mango and all of the thickening went away. Just like corn starch.

The second time I had the mango in the sauce and up to temp and then added the starch. It thickened right away and I then served it. As it sat on the plate while eating it started to loosen. So, that's ok, but not ideal.

Mango just on top is ok but you don't get the mango flavor in the sauce as much.

I don't think it's acidity. I've added orange juice to other stir frys and corn starch thickens just fine.

What makes a hoagie a hoagie?

Agree with Deluca cheese monger.

Something not usually mentioned: in a hoagie the loaf is sliced almost but not quite in half so there is a "hinge". They lay the loaf open, then lay on the cheese first, then the meats, then the veg. The wet stuff is therefore not touching the bread.

On a Sub - which reminds me of substandard - the roll is sliced in half and the top part lies on the wet veg.

McMillan's Bakery on Haddon Ave. in New Jersey has the Best Cream Donuts I have tasted

Yes. The cream donuts are great. So are the chocolate raised donuts and the jelly donuts. They are the best I've ever had. Better than NYC's exalted Donut Factory.

In the spring, their hot cross buns are terrific. I don't think they have them at other times.

Collingswood starts once you cross Cuthbert, which is 100 yards away.

When I make a stir fry and add fresh mango, any thickening from the corn starch disappears. Some enzyme thing I guess. It doesn't matter if I thicken the sauce first then add the mango, or add the mango and then try to thicken it.

So, how do you thicken the sauce when using mango?

I see tapioca starch and potato starch in asian markets. Use one of these instead?

I'll second that. Best I've had outside of Iselin or India. Consistently outstanding over dozens of trips and several dishes.

Cherry Hill area hoagies

DiPascale's is hands down the best. Really. Sarcone's bread. Good quality meat. Excellent amount of meat. Better than Chick's (2nd) and Carmen's (3rd).

The Mob names on Primo's menu means I will never set foot in their place.

I liked the Grotto and miss it. Two things stand out in my memory. The cook's sister was a waitress who wore what looked like J.S. Bach's wig so we called her Madame Bach. She never wrote down your order and never got it wrong. I always asked what was for desert because she used an unusual pronunciation for spumoni. It came out sounding like spermoni. Just in case I never ordered it.

After reading this gushfest I tried WSG on a Thursday night.

I got their fried chicken. Bleah. Remember the last time you had a fried chicken frozen dinner? Take it down a notch from Swanson. Banquet maybe. No, what's below that? THAT would have been better.

The chicken was indeed frozen - you can tell by the color of the bones. The order is not a half chicken (breast,wing,thigh,drumstick) as the diner vibe would have you believe but two drumsticks and two thighs. You know - the 39 cent a pound parts. I should have asked.

The flavor was "reheated chicken" flavor. You know that taste. You make a pile of fried chicken and can't eat those last few pieces. So the next day you heat them in the oven. The unmistakable reheated chicken flavor. That's what you get here. Yes it was hot (straight from the oven!) and crispy. It was also dried out and it had that gross flavor. Hardly "This was some of the best homemade fried chicken you will anywhere [sic]"

The cole slaw was good and the potato salad OK.

I hate to say it but Country Buffet makes fried chicken a googolplex times better than what I was served.

yes the parboiling is good.

I don't use just oil; I put them in the pan that the lamb was cooked in while its resting. So you get arni goodness along with the rosemary. Then I toss with the lemon juice and put it back in the oven for a few minutes.

... and there's no extra pan to clean.
