Ideas for a foodie vacation?
I second Houston. Spent a week there a couple of years ago and never had a bad meal. Most everything was absolutely wonderful--from Thai to Italian, Eclectic to Classic!
braising short ribs: English-cut vs flanken-cut
Flanken ribs are generally intended to be marinated and then grilled. A marinade of soy sauce, onions, garlic, kiwi, green onions, and sugar is used to flavor and tenderize them. They are then grilled to a medium or medium well. They are tender and very flavorable. Since they are cooked through the grain it works. Whole shortribs couldn't be cooked this way. . .so, therefore, they are braised until tender.
What to do with Wahoo (Ono)??
The goddess is exactly correct. The fish should never be over-cooked. It is a firm white fish that will accept a marinade for short periods of time. It also pairs well with a fruity salsa--say pineapple or papaya. I love it, but only when moist. Grilled is preferred preparation.
Help! I have too much cilantro!
Make a pesto with bunches of cilantro, toasted pine nuts and garlic. Great on pasta, will last for two weeks in refrigerator.

It seems to me that California loves Tri-tip. I don't usually see it anywhere but in California.

There is a pretty good Chinese restaurant, the Hunan, I believe is its name.
Roast duckling . . . I need some guidance.
First off, I would rinse the cavity then season inside with granulated garlic, salt, and pepper. Stuff it with coarsely chopped carrots, onions, and celery. Score the fat, trying not to penetrate into the meat.
Cover with foil and heat at 450 degrees for one hour (this is to steam the fat out). Turn the oven down to 300, take off the foil, and cook for two more hours. It will be perfect. Discard the carrots, celery, and onions.
Orange sauce is pretty traditional. Its also great with a port and balsamic demi, or perhaps sauce piquant.
The skin will be beautiful and brown.
By all means save the fat. It is great when roasting vegetables--adds a huge dimension.

It totally depends on the quality of the meat. If it is certified angus beef, then, yes. However, run of the mill choice with little or no age, then no. If it has great marbleing and dry, white, flaky fat its probably a good purchase. Proof is in the eating. Good luck!

If you want a little color for your coating, just add some paprika. Simply make a dredging flour with the seasoning you might like and add a fair amount of paprika--instant color! Don't need old oil or other tricks.
How to pre-grill steaks for dinner party and keep warm?
If you must, you can mark the steaks on the grill with your diamond criss-crosses to give the appearance of the grill. Do this on both sides as close to the time dinner is to be served. Then, pop them into a very hot oven (450-500 degrees) and finish cooking. For large banquets, restaurants do this all the time.
A night in durango
I think you are all overlooking my favorite local restaurant: The Hamilton Chop House. They are absolutely not in the same class as the Ore House, or other steak purveyors. They do fresh seafood fabulously without over cooking it as most others. Wild game is also on the menu, plus they have fantastic homemade desserts. I have a hard time choosing from the menu as everything is top-notch! I am told they buy the best beef of any restaurant in the area. If you haven't tried them, you should.

There is absolutely nothing to my knowledge. Perhaps, though, the Chinese restaurant next to Bashas would be the best. If you are getting on a houseboat, I recommend you eat on board!
dinner menu for picky gourmets
Spring rack of lamb is simple and very tasty. Add a salad, potatos au gratin, and seasonal fresh asparagus. Simple and very elegant.
Farmington, NM
El Charro on S. Main across from the old Safeway is excellent. Try the "El Charo" special and substitue a chicken enchilada for one of the cheese enchiladas. Also enjoy a chili relleno on the side. Their salsa is outstanding.

Good Eats in Grand Junction

Farmington doesn't have much--mostly chains. That said, the El Charro on East Main avenue is quite good for Mexican food. It is dumpy, but the food is great. For a nicer place, try The Bluffs.

Would you cook expired corned beef?
By all means. In fact, it may even be better. The FDA always demands extreme caution, which is ridiculous, as you know, if you travel outside of the U.S. If the cryovac blows up, or the meat discolors, then you might have a problem--otherwise not. Enjoy
macaroni and cheese big time competition
Just made mac and cheese the other day and added good quality horseradish for the first time. It made for a very tasty dish.

The very best pizza I've ever eaten was at a place in Redlands, CA. (Named the Gay 90's, I think, but, it has been 33 years, and, my memory may be fading) --They had large chunks of Italian sausage, pepperoni, onions, peppers, and CHASHEWS; it was fabuous, and has taught me that cashews belong on pizza!
Cauliflower recipes - Dazzle me.
Instead of olive oil, which is good, try rendered duck fat and prepare in the same fashion (I use granulated garlic, salt, and pepper). It is really fabulous!
Red Lentil Soup Recipe
I've had this soup in Turkey on many occasions. It is very simple to make--called "esogelin" soup, I believe. Cook red lentils about two hours or until soft in water (I use chicken stock). In seperate sauce pan, melt butter, add equal parts flour, cumin, tomato paste, Turkish chile and dried mint. Add to lentils and enjoy. Serve with a wedge of lemon and, if you like, a little browned butter on top.
Once and for all -- rice in a burrito -- Yay or nay?
Come on, rice has no business in a good, traditional burrito. Just as beans are not permitted in chile cook-offs. This should not even be debated. Is velveta proper for chile con queso?? Chowhounds should know better.
