Biscuits - Can you hold them overnight ?

You shouldn't hold biscuits in the refrigerator overnight. You can either do as revsharkie says and go ahead and cut your butter (or whatever fat you're using) into your flour then store that in the fridge along with your pre-measured buttermilk (or milk if you must), then mix them in the morning OR go ahead and cut them out and freeze them IQF style on a baking sheet in the freezer and then store them in a freezer bag or just wrap your sheet pan well in plastic wrap. I know you said that you didn't want to freeze them, but biscuits bake up perfectly, maybe even better than fresh from frozen.

corn-syrup free pecan pie?

In north Florida, people often use Tupelo honey, in Louisiana - pure cane syrup. I use sorghum for my pecan pie, but I like the honey and cane syrup versions, too. All of these produce much tastier pies than does corn syrup. You could also use barley malt syrup (or brown rice syrup as moonbop did). The Lee Bros. Southern Cookbook has a great recipe for sorghum pecan pie.

Best Triangle Sushi

You say it's the real thing then you go on to describe cooked sushi rolls and nigiri. It might be good, but it sounds inauthentic. For the Japanese, sushi is raw. I'll be sure to give a try nonetheless.

If you want great Brunswick stew in the Chapel Hill area, try The BBQ Joint out on Weaver Dairy Rd. in Chapel Hill. They are also my favorite place in the area for BBQ and they sometimes have brisket as well. I like Allen & Sons (on Old 86), too, but BBQ Joint has better hushpuppies and lots of great sides (try the brussel sprouts with bacon) and desserts (don't miss Billy's apple pie with cheddar crust or the Sweet Potato bread pudding), too. Plus, they have lots of chalkboard specials. They make their own sausages, and sometimes have beautiful pan-fried snapper or delicious Cajun or Creole specials. I eat there twice a week. As you can tell from what I've described, this is not a strictly traditional BBQ joint, but they do a great job. Call ahead if you want Brunswick Stew. They don't always have it, but it is worth making the trip for if they do. Bring friends because you'll want to order a lot!
