How do you keep cheesecake lollipops from falling apart at room temperature?

I am making cheesecake lollipops for Christmas and I have read quite a few posts that they should be stored in the freezer of they thaw and start falling apart. The base is basically cheesecake with no crust and then is dipped in chocolate and covered with toppings. Kind of a similar concept to oreo truffles, which work great on sticks and make a great presentation. Is there anyway to keep my cheesecake lollies from falling apart? It is inevitable that they may sit at room temperature, even if I store them in the freezer right before serving, people may not eat them right away. The sticks really make a great presentation, so I definitely want to do them this way. Would leaving the crust on before shaping into balls be better? Most of the recipes call for crustless cheesecake.......Any suggestions?

My cheesecake looks borderline burnt on the sides. It has a dark dark dark dark crust, but I only put the graham crackers on the bottom. I am no sure what happened. I put a pan of water on the bottom shelf and cooked it at 325 for 1 hour. It is so dark looking on the sides that it looks like it has a graham cracker crust going all the way up, but it doesn't. Does the quality of the springform pan make a difference? Does a light pan vs. a dark heavy one impact the way it cooks. I was attempting to make a layered pumpkin cheesecake (vanilla on the bottom and pumpkin on top) Can someone tell me what to do because I am about to go and get ingredients to start all over again in the quest for a perfect looking cheesecake.

Cheesecake Disaster...Please Help

I attempted to make a two layer pumpkin cheesecake. A layer of vanilla cheesecake and a layer of pumplin cheesecake in a pecan graham cracker crust. I basically made two different cheesecake recipes to have enough to bake two 9 inch cheesecakes with the two layers. I baked the vanilla layer for about 15 minutes just so it could set before I poured the pumpkin layer on top. I baked for 60 minutes at 325. The outer edge of the cheesecake the crust basically looks very very very dark hard and borderline burnt. I only put the graham cracker crust on the bottom, so why do the sides look like this? I bought new springform pans from target that seem to be dark and heavy. Could that play any factor on the edges looking like this. I am trying to achieve a perfect looking cheesecake and am dumbfounded on what happened here. Does it matter which layer goes on the bottom? Should it have been the pumpkin? Or does it really matter? What do I do? I put a pan of water on the bottom shelf instead of the actual water bath because I was nervous about water getting into my cheesecake. Please help me so I can make a perfect cheesecake for Thanksgiving. I am going to go to the store and buy ingredients to start all over again.

I saw this recipe and wondered if anyone has made this? Some of the reviews on another site suggest a 13x9 pan because they say the cake splits when you put the second layer on, but I really like the presentation of the layer cake. I posted a link to the site that has the recipe and a photo of what the cake looks like. If I decide to make this in a 13x9 pan, is there any way to capture the same nice presentation that the layer cake has?

How do I get that swirly effect on cupcakes?

I have a 1M decorating tip and I used it to decorate my cupcakes, but my swirls looked flat and did not have that slight peak that I see on cupcakes in the bakery. I read somewhere that you create one swirl and then another one on top of it. I am confused. Does that mean I create an entire swirl and then start at the base of where I started with another one, or does that mean I pipe a swirl around the edge and then pipe a new swirl in the middle? I guess I need it broken down further because without actually seeing someone do it, its tricky to figure out.

I looked at the video on chowhound that has tips on how to rim a glass with sugar and that technique did not work well for me. I have a product called cocktail candy which is basically colored and flavored sugar and when I did exactly what this video said, mine looked sloppy. I am trying to do it with disposable plastic tumblers for a kids party and could use tips on how to make each one look the same. Does the fact that I am using plastic and not glass make a difference? Do I just dip it in the sugar like on the video, or do I put it in the sugar at an angle and slowly rotate/twist the cup. Is it better to use a piece of lime around the edge of the glass or dip it in lime juice thats in a bowl.

How to transport a cake without messing it up

I have to transport a cake in my car about 70 miles and my main concern is how to keep it from sliding around and messing up the design. The last time I transported a cake, by the time it made it home, the sides where the frosting was were stuck all over the sides of the bos and the top where the flowers were was smashed and the writing had smeared off. I sat the cake on the floor in the back of the car and nothing was on top of it or around it and it still got messed up. I would hate for this to happen again. Please tell me the best type of box and how to position it. I am getting the cake from a bakery, but she does not use tent boxes and I am worried.

I am looking for some long fluted types of acrylic glasses and so far all I have found is the flimsy variety they sale at party supplie stores. Those are okay, but seem like they don't hold much liquid and would break easily. Any suggestions on where to get some slightly nicer ones that are not super expensive. Need Creative ways to garnish drinks for a childrens party

I know the ususal way of garnishing drinks with speared cherries, pineapples etc., but I am looking for a more creative way for a Candyland themed birthday party. So far I came up with rimming the glasses with flavored sugar and using gumdrop skewers. Are there any other colorful ways to present drinks.
