mormon funeral potatoes

Paraphrashed from my legit Mormon cookbook!

12 large potatoes or 1 (32 oz) bag frozen hash browns
2 cans cream of chick soup
2 cups sour cream
1 cup grated cheddar cheese
1/2 cup butter, melted
1/3 c chopped onion
2 cups crushed corn flakes
2 T butter, melted

Peel potatoes, boil 30 min or until tender. Cool and grate into a greased 9 x 13 baking dish. OR Put hash browns into the baking dish. Combine soup, sour cream, cheese, the 1/2 cup melted butter, and onions. Gently blend into potatoes. Combine crushed corn flakes and the 2 T melted butter. Sprinkle on top. Bake at 350 for 30 minutes.

***I have made this type of dish many times...Just a note...I usually mix everything in a bowl and then dump the mix into the baking dish and then top. One more dish to clean, but I would think it difficult to give everything a proper mix in the confines of a 9 x 13 pan!

Resource/Advice Needed About making meals ahead of time

I throw meat and marinade ingredients in a ziploc and freeze.

When I'm ready to have...say...flank steak...I pull from freezer and let thaw in the refrigerator. It marinates as it thaws.

I usually put together several packages..assembly line style...of favorites. Flank steak, spicy chicken, lemon chicken....

Help! I made a huge batch of butternut squash soup.....

The recipe I use calls for the addition of chopped golden delicious apple and sweet potatoes. If you have the time to simmer these in your "hot" base until tender I think they would help ease the heat!

Blind Dog is fabulous!! I've had 3 amazing dinners there. Check out their website for more menu info and even a recipe for their famous upscale meatloaf.

Tree Room worth the drive from Park City...at Redford's Sundance resort. His Park City restaurant, Zoom, is right on main street.

HELP: how to make popcorn on the stovetop

You must shake the pan...lid on as you go. Don't skimp on the amount of oil either. Not just a pan coating...a little depth.

Hottish pan...add oil and corn...shake rattle and roll!

white popcorn produces small almost hull free pieces.

yellow... big pieces thus more hull.

I'm thinking about not straining the spices out and letting everything take a bath in the fridge for a few days. Planning to strain as I go. Will the spices become too overwhelming? My first crack at infusing!
