stuffed zucchini
I use parmesan, and I don't add the zucchini meat to the stuffing. I do sautee the onions and garlic in bacon fat. Dinner tonight, in fact!
Fish tacos??
This is the first fish taco recipe I tried, and It's also my long-time favorite:

"New to me" breakfast in Louisville
Sweet and Savory on Bardstown Road is now Fleur de Lis Cafe. It's under new ownership, but in the same location, serving much of the same food.
Right now you can get about the best breakfst in town at one of the Farmers' Markets. It seems like the options just keep expanding!
What are your tried and true favorites from Epicurious.com
That's it! Must make it, now. . .
caponata
Here's a recipe from a local restaurant. I make it often, and it's always a big hit. Since hubby dislikes green peppers, I use all red/orange/yellow.
This caponata needs to cool and/or rest overnight to taste its best, but it's so, so worth the wait!

Wedding Week in Louisville
Bourbons Bistro is awesome if you want the bourbon experience--and the food is stellar!
Best Salsa Recipe?
Our "house" salsa recipe originated with one from Rick Bayless. Unfortunately, the original link is now dead, but here's one that's similar. I always use 2-3 red onions in mine!

Side dish rec's for grilled strip steaks w/chimichurri
Okay, not authentic, but this salad (minus the tuna) has become one of our favorites with anything that comes off the grill.

Wow. Congratulations!
There are several recent threads with stellar recommendations. . .you will not have trouble finding great, local food in Louisville.
Check out louisvillehotbytes.com for reviews, commentary, etc regarding the Louisville area dining world.
Brew=New Albanian Brewing Company. They have two locations just across the bridge in southern Indiana: one downtown (the Bank Street Brew House), one on Grant Line Road, which isn't quite as close (New Albanian Public House and Pizzeria). Also, Cumberland Brews on Bardstown Road has great food and house-brewed beer.
Romantic dinner=Le Relais at Bowman Field
There's really too much to mention. . .will you have a car?
Cheers!

Doctoring canned baked beans. Suggestions?
I usually mix canned baked beans and canned, plain beans (my favorites are black and cannellini), then start adding.
In addition to the usual (mustard, brown sugar, ketchup, etc), I love ginger--either dried, ground or freshly grated.
Hummus - How or what do you serve or eat with it?
One of my favorite restaurant salads starts with a thin layer of hummus in the bowl, topped with romaine, red onion, tomatoes, olives, feta, cucumbers, etc. I think there was a viniagrette with it. . .the bit of hummus with each bite made it unforgettable.
Hummus - How or what do you serve or eat with it?
Do not make this if dish licking offends you.

Not in Lexington but very well reviewed--Joe Davolos in Louisville.
How to cook a chicken breast
I put them in a microwaveable COVERED container and cook them (I usually have a package of three) for 5:00, then let them sit for 30:00 or so.
That said, I know microwaves vary IMMENSELY in power, so make sure they're done.
Sunday lunch in Louisville
Lilly's (Bardstown Road) has a great lunch, and they are hardcore locavores.
As far as institutions go, you might like Jack Fry's (Baxter Avenue).

Breakfast Sausage Recipe
Our source for hand-made breakfast sausage is gone, and I need a recipe that I can make myself. Anyone have a good one? At the moment I don't have a meat grinder on hand, but I have access to one when I get ready to make a large quantity.
Do you bake with kosher salt?
I almost always bake with Kosher salt, and I haven't had any problems. In fact, many of the recipes I use call for Kosher salt specifically.
Where can I buy large reusable grocery bags?
Sam's Club also has great, big, reusable bags.
Big party, Everyone brings a big salad or any type - what would you bring?
This is my MIL's spaghetti salad recipe. It is a staple that I'm happy to have in my repertoire:
1 # spaghetti, broken into thirds and cooked al dente
2-medium cucumbers, peeled, seeded, and diced
1-large red bell pepper, seeded and diced
2-3 medium tomatoes, diced
1-medium red onion, chopped
16-oz Italian dressing (I use Wish Bone Robusto)
1-McCormic Salad Supreme seasoning
3/4 c grated parmesan cheese
Freshly ground black pepper, to taste
Holy mother of G*d rhubarb!!
I think you're my hero.
I ADORE rhubarb, but am loathe to buy or grow it because I am the only one in my household who likes it/I'm too lazy to bake pies or crisps during the rhubarb season/I can't justify the calories I would undoubtedly consume if I did bake pies or crisps--for myself.
Thank you, THANK you!!
Unaged Whiskey - Corn or Rye (Longish)
Not widely available--yet; Corsair unaged rye is one of my favorites.

What is the best waffle mix?
I love Hogsdon Mills buttermilk waffle mix. Don't know how widely available it is (I'm in Kentucky).
Alone, not confident. Think I should try entertaining again. Without any help, or should I just get a caterer?
You might enlist one of your neighbors to help you plan, especially if you have concerns about children. As a parent, I typically bring entertainment if there's a question.
It sounds like you have very lucky neighbors. I hope you have a wonderful time!
Louisville,KY & beyond
Come Back Inn, most definetly!
Joe Davolos is highly recommended if you're in that area for lunch.
Papalino's Pizza (Baxter Avenue) has quickly become a huge, huge favorite.
If you're in Southern Indiana, the New Albanian is our favorite spot for beer, and their pizza is my own favorite.
Must mention my own favorite restaurant, Mayan Cafe.
If you have the inclination, check out Corsair Artisan Distillery in Bowling Green. Great stuff, ridiculously friendly people.

Lime Curd from jar (Dickinson's)
I swirl a bit into plain or vanilla yogurt. Yum!
PS It's not hard AT ALL to make lime or lemon curd, and it keeps pretty well in the refrigerator.
Best candy for office
A friend of mine keeps Cream Savers on her desk, and they're always a hit.
I love Werthers caramels and Brachs butterscotch discs.
