Shui Zhu Yu (Sichuan Boiled Fish) Recipe?
There's a recipe in Fuchsia Dunlop's "Land of Plenty" (I don't have the book in front of me, but I believe the recipe is for water-boiled beef, with a note that you can use fish in place of beef). I've tried the recipe only once and was lacking some important ingredients, but it was still quite good; I imagine that with the called-for ingredients, it would have been great.

I've found it's the opposite usually; if I don't specify, it comes with no pork. Occasionally they ask if we want pork when we order.
Gen Sushi in Belmont is finally open
We tried it this week and echo all of the comments above. The place is tiny but quite nice inside, and the service was incredibly warm and friendly. As mentioned already, portion sizes were very generous. DC found the sushi fresher than our recent visits to Toraya; I really liked the agedashi tofu.
Sichuan peppercorns- duds?
We've gotten good ones from Penzey's (they sell online at www.penzeys.com), but I don't know whether they ship to New Zealand. (And we've never been to China, so I can't compare to ones you'd find there.)

If you have a microwave, you might also freeze soups/stews in a tupperware at home. They'll stay pretty cold, especially in an insulated bag.

Loving the Lowly Okra -- recipes?
My favorite recipe is one from Madhur Jaffrey's "World Vegetarian". It's called something like "okra cooked in an Australian manner", but the ingredients are more Asian - garlic, chiles, soy sauce, sesame oil. You stir fry the (whole) okra with garlic and chiles on high heat for a couple of minutes and then cook on low heat until the okra is tender.

I'm curious whether anyone's gotten ginger at any markets. I understand that Old Friends Farm, which is at the Copley market, usually has some in October, but it's hard for me to get over there on Tuesdays and Fridays. Any other places where I might get some?

how to make amaranth cereal
Sorry to drag up an old thread, but I'm curious about cooking amaranth together with steel-cut oats. I usually soak the oats the night before (in water that's just been boiled) and then cook it the next morning for just a few minutes. I'm wondering if I can add in some amaranth with the oats initially, or if that will over/undercook. Thanks!

veggie chickpea/garbanzo soups...any favourite recipes?
If you happen to have Marcella's Italian Kitchen by Marcella Hazan, the chickpea soup in there (pasta e ceci) is wonderful. It calls for meat broth, but we've always substituted vegetable broth.

We've gotten some bars at Formaggio that were quite old; I've actually had better luck at Cardullo's (although I've never seen Amedei at Cardullo's). Now we mostly order online from Chocosphere.

We only tried them once at Beijing Star; they were definitely knife cut (刀削面), and although I wouldn't call them gooey, they were definitely soft and didn't have any of the chewy bite we were hoping for.
