Guanciale at Russo's in the East Village

Spaghetti a la carbonara made with guanciale is vastly superior to carbonara with pancetta. I was stunned that Eataly did not have it when I went the first month it was open - don't know if they've gotten it since. I know that they carry it at Biellese Salumeria, 378 Eighth Ave. @ 29th St., and I hope to try Murray's Milano's guanciale soon.

Desperately seeking good smoked fish...

I'm desperate for a good smoked fish purveyor, preferably in Brooklyn. Apparently, Marshall's is no longer, and please don't say Acme - I think their fish is salty, chemically, and truly awful. I used to love Homarus in Mt. Kisco, but they have morphed into a new incarnation, and since my cousin moved, I no longer get up there. Where do Russ/Zabar's/Barney Greengrass get their smoked fish? Desperate for a great sable, nova, whitefish, et al.

Dover Sole in US supermarkets: is this the real thing?

The dover sole sold in US grocery stores and Costco is NOT the spectacular European dover sole, which is served as a whole fish there, perfect for one person. It is another genus entirely, a rather limp, ordinary, over-sized, cut-up, cheap pretender, which bears no resemblance to the delicious fish from which it steals its name.

Tiger Lily in Los Feliz - anyone been lately?

I'm sorry to hear about the emptiness of the place, because I was rooting for owner Sumant Pardal to succeed. Sumant used to own Tufaan in Sherman Oaks, which was the best Indian restaurant tin the city - even south-of-Mulholland friends were happy to come over the hill to join me there. After he sold it, it took a nosedive. Can anyone else offer a recent evaluation of Tiger Lily?

Matzo Ball Soup Challenge

Art's is wildly overpriced for ordinary food. At Brent's they put sugar in their soups. Good matzoh ball soup at Factor's and Roll 'n Rye. But as someone who was weened on the superlative mb soup at Sol 'n Sol in Englewood, NJ, my vote for LA's best is Langer's, with Greenblatt's in second position.
