Does anybody use really old cream for baking?

as a home and professional baker, i would have to say oh, hells to the no. that cream is rotten!- the stuff you get at the store (ie: sour cream, buttermilk) is cultured with bacteria in a controlled environment. i think you would risk food poisoning if you used "bad" cream.
