This actually is the exact same menu as the one in Ridgewood. If you look on the website, it says voted #1 by NJ Monthly Magazine. Under the pnacake menu, htere is a NJ pancake. This is definitely their menu. I guess they have another place in Florida

Making Mashed Potatoes with No Ricer or Food Mill

I am going to be making a Goat Cheese Mashed Potato Gratin for a side on Christmas but the recipe is saying that I need a ricer or a food mill and I don't have either. And I know that I just can't smash them with my potato masher since it has to be a creamy consistency verse a thicker and chunkier consistency. How would you go about this? I have a Kitchenaid but only have the whisk, hook, and paddle attachments. would any of those work?? Thanks in advance:)

A gourmet shop in North Bergen, NJ

I've only been to Zeytinia in Oakland and I was quite disappointed. We bought cannolis from there thinking that they looked amazing. We bit into it only to find they only put the cannoli cream on the ends - absolutely NO cream in the middle. The eclairs we bought from them were filled with a LEMON custard - no clue why!!! And then there were quite a few things that were passed their sell by date.

30th Surprise Party - Good Food and Karaoke??

I'm helping a friend out and trying to give her ideas for her husbands 30th Birthday. She wants good food (mostly apps), good bar, karaoke, and she really wants it to be a private thing. Any suggestions? I have no clue what her budget is. She wants it to be relaxing, casual, and low key. I already suggested Spotlight Live to her but she wants to get a few more ideas. Does anyone have any suggestions? Figure about 30 people will be attending. Thanks!

Hi love2cookmb - your boyfriends parents don't happen to live in Rio Vista, do they? If so, my parents live there and I was actually thinking of using the clubhouse for my sons baptism party. Market Basket is a really great caterer for the area - they are in Franklin Lakes. I use them for all of my parties. And a great place to get the cake from is Desserts of Distinction in Waldwick. Their cakes are amazing!!! I've also heard pretty good things about The Best of Everything in Ridgewood for catering. Let me know how everything goes and if you happen to know the cost of renting out the clubhouse, please tell me.

Hi everyone - does anyone know if there are any bakeries in Bergen County that sell Chocolate Babka? I'm 9 months pregnant and having quite the craving. I was going to order it online at Zabars but checking to see if there are any bakeries that sell it in Bergen County. I live in Mahwah and I'm willing to travel - Rockland County would work, too.

How long in advance can I make these pies?

I'm planningon making 2 cinnamon crumble apple pies (recipe from epicurious) and 1 bourbon chocolate pecan pie. One of the apple pies will be for Christmas Eve and the other other two pies (one apple and pecan) will be for Christmas day. Can I make these on Sunday or should I wait until Monday? I have so much cooking to do on Monday that I'd really like to get the pies out of the way, but not sure if they will hold up long enough.

What roast should I make with my Christmas Menu

So I have my entire menu picked out for Christmas day just not the main meat dish - I'm having 14 adults and 4 children here - more then I wanted because I'm almost 8 months pregnant and get exhausted pretty easily - but that's a totally different story. So this is what I'm doing:

I'm going to have an antipasto platter out and all of my guests will be able to pick on it while opening gifts and talking.

Also, a tomato and mozzarella platter will be out at the same time

Next, I'm serving baked ziti - everyone will be sitting down for that - I'm making the sauce this weekend and putting it in the freezer - taking it out the day before and will prepare my baked ziti Christmas morning.

Then the next course is where I really need help. This is what I chose to do so far, but I need a meat.

-Stuffed Mushrooms - stuffed with a sausage stuffing - hoping my brother will be bringing those.
-Roasted Potatoes - easy and fast to put together
-Spinach Gratin (Ina Garten's recipe - absolutely delicious). I'll also prepare this in the morning, so I can just pop it in the oven.

So, first I was thinking to do a roast beef tenderleoin with a port and rosemary gravy. I this recipe on epicurious. I still might be doing this one. Then I thought to do a pork tenderloin with fig sauce, but I made that last year and exact same people will be joining us.

I only have one oven, so I figure that when I take out the baked ziti, I'll put the meat in - enough time to cook and give everyone a breather - ideally, I would like to do a roast that would take an hour to an hour and a half (which is where I was with the beef and pork tenderloin). The potatoes will cook in about 35-45 minutes at 425 degrees and the spinach only goes in for 20 minutes just to bubble at 425 degrees. I'm thinking out loud here so don't mind me. So I would also need a roast that can cook at 425 degrees (I probably cook a roast once - twice a year).

Anyone else have any other suggestions?

Tommy - are you sure that there was a change in ownership?? Joe was the owner on the show and he just posted this thread. Maybe the new menu made you think it was under new ownership? I haven't been there lately, so I can't tell you if it is under new ownership.

Help! I have All Purpose Flour instead of Cake Flour

Thanks! The only brand cake flour they had at the food store was Presto Self Rising, but it specifically said Not Self Rising. Does anyone know if Swan (I think??) Cake Flour is self rising? I could run to a store that has that - it's a just out of the way.

I'm going to be making Magnolia Bakery's Red Velvet Cake and it calls for non-self rising cake flour. I couldn't find non-self rising at the store so I decided not to buy cake flour. Do you think it's ok to substitute all purpose flour?? Is there something I need to do to the flour to make it work better?

What did I do wrong with my pie crust?

It really sounds like not enough water was added. I make sure to use 3 cold tablespoons per pie crust, so if you only used two it might not have been wet enough.

Can you recommend a bakery that does fabulous cake designs?

Deserts of Distinction in Waldwick NJ is amazing. All of their cakes are absolutely gorgeous (for my baby shower, the cake was a huge bassinet) and all of their cake is absolutely delicious. This is all they do - they make nothing other then cakes. You wouldn't even know it's a bakery if you drive past it, because the only thing in the front is a desk and a couple of cakes are on display. But you go in there and you have a cake testing to figure out what you want the cake to be made out of. One problem though. I don't think they delivery but they might. I only live a couple of towns away so I always pick it up on the morning of the party.

There is also a great pie crust recipe on the Williams Sonoma website - it's the Basic Pie Dough and it's wonderful. It's the only dough that I ever make and it comes out perfect every time.

I was talking to my husband about this last night and we both said that we'd never go to any place that has been on Kitchen Nightmares. Only because we feel that they are set in their ways and it will happen again. Not to mention, last night, at the end of the show it said they sold the Seascape 5 months later. Soem of the kitchens in that show are absolutely horrendous. The food is rotting in most of them (but the Mixing Bowl I believe). Why won't they do it again and serve that food to their customers?

I think Jersey Boys is on Route 17 and I've seen there car deliver to my nextdoor neighbor, so they definitely deliver. I would also highly recommend you drive to Oakland and get a pie at Tony's Brothers

I know - I love La Gondalas. My nextdoor neighbors always order from Jersey Boys. I've never tried it, but maybe I will one day - they deliver. I was talking to someone I know in Suffern and he said Il Villaggio Pizza is pretty good (in Suffern) not sure if they deliver though.
