Big D's Smokehouse - CFM (Calgary)
Went there today to try it out. My thoughts:
- They have a very limited selection of BBQ sauces - spicy and mild. There were hard to tell apart, they were thick (eww), and they had smoke flavour (cheaters!) added. I want to say it was Bull's Eye.
- Pork ribs were too dry. They were covered in BBQ sauce, which I guess adds to their smokiness by way of cheating.
- Beef ribs were good, but almost a little too smoked to the point of acrid.
- Beef brisket was alright. It was comparable to Holy Smoke's, but it certainly wasn't any more moist or tender.
- Corn bread was terrible. Way, way too dry.
- Loved the spicy coleslaw.
- I strongly suspect the wood used is either 100% hickory or mesquite. That's a little too pungent, there should be some applewood or other milder wood added for balance.
I suppose some of it is personal preference, however thick, sweet, added smoke BBQ sauce I find is completely unacceptable and ruins most everything it touches. I didn't find it any smokier than Holy Smoke, even with the cheater sauce.
Overall if Holy Smoke gets an 8/10 from me than this place gets 6/10. They need to drastically improve the BBQ sauces and reformulate their smoking wood proportions.

Believe me, there is a huge difference in minced garlics. Look for ones that contain only garlic and some sort of acid to keep botulism away.
Some have all sorts of added ingredients for some stupid reason.

Ate there a while. Enjoyed it quite a bit. Couldn't really give a review though because I was half-comatose from my kids.

I did go to the Macleod Trail location a couple of weeks ago. It's definitely much smaller than the Deerfoot location, and the line was inching because everybody, and I mean everybody, in the line ahead of us was asking about the menu.
The one thing I find is that sometimes the cooks don't put enough seasoning on the patties.
The Deerfoot location skimps on the fries now, which is annoying.
I still enjoy them though. I divide establishments into two categories: tip optional, and tip not required, and of the tip not required places, for burgers the place is right up there.
But if Rocky's had toppings in their burgers, they would conquer the world.

Just as a point of comparison, a Wendy's single burger combo is now almost $9 without taxes.
Relatively speaking, Five Guys isn't that bad of a deal, and a hell of a lot better for that price point.

can I "can" roasted garlic in oil?
Pressure cooker. Need to get above 240F. Also by adding high amounts of salt and/or sugar, both of which are preservatives.

Garlic! Garlic! Garlic?
Virtually all garlic you see in stores is from China. You can try "elephant" garlic - it tends to be milder.
Also try any farmers markets in your area. Hopefully someone grows it and sells it around there.
Or you can grow it yourself. It's not too late to plant for next year's harvest. And garlic keeps for a very long time. There's literally hundreds of varieties, so I'm sure you can find out that suits your tastebuds.

Went last week to take a look and it doesn't look anywhere near completion. They're still putting together the parking lot, even.
Oh yeah, the Deerfoot Meadows location has the full Five Guys menu now - hot dogs and sandwiches are now available.

It gets complicated, but in general low-fat mozza tastes weird (off flavours), and also tends to be low-moisture, which makes it less stringy and well, icky. But the "problem" with full-fat mozza is that it can separate when cooked, so there's oil on top, which many people find extremely objectionable.

The only way to get stringy cheese is to use a high-fat mozza, which many, many people object to these days (yeah, I know). Almost all pizza shops use low-fat mozza now, sadly.
Do tomatoes hate potatoes?
Both potatoes and tomatoes are heavy, heavy feeders. They're probably competing for nutrients - with the potatoes winning.
Generally, tomatoes should be given lots of space. It's better to plant less plants and get more from each, rather than more and have them compete. Tomatoes are extremely vigourous plants - their roots can go 10 feet from the plant.

Wow, I totally disagree with calling Calgary's food bland. Inconsistent, sure.
Try Nick's pizza. If you want REALLY cheesy, try Varsity, but it can be a greasefest.

Calgary is very dry, even in summer. Humidity greatly affects your sense of taste and smell.
In regards to milk, brands here vary greatly in terms of richness. I've noticed this for years. Lucerne brand is terribly thin, even its 2%. Butter is the same deal - there is a massive difference in quality between brands here.

Yes, you need to keep the people inside warm, and you need to run refrigeration, and you need to keep the entire cooking area above zero at least to keep it actually working
But hey, don't take my word for it. Go ask the guy that runs Bubba Louie's - he couldn't operate in winter because his entire truck froze over. And that's with dual propane heaters.

For some varieties, you can leave them in forever until you're ready. You can get monster sized garlic this way. They tend to be really mild.
