Is there a Worthy Professional Blender That's Not the Vita-Mix?

I know, I know. The Vita-Mix is fantastic. But it's also expensive. Is there another professional blender that has a lot of the capacities without quite the price tag? Has anyone had any experience with the Healthmaster?

Restaurant Recommendation for UWS?

Why does my graham cracker crust always crumble?

What is wrong? My graham cracker crust for my coconut cream pie crumbled. I tried twice with no success each time.
Here's the recipe -- 1 1/2 cups already-crumbled graham crackers, 6 tablespoons melted butter and 3 tablespoons sugar..Mixed all together and cooked until a dark brown. It looked down but after putting my coconut custard into the pie shell and carving into the pie, the whole crust fell apart. This always happens. What am I doing wrong?

How to make Baked Mac and Cheese with Lobster

I used to work at a restaurant where they made this.. Basically they made a bechamal of flour and milk and then added the cheese off the heat. They coated the mac noodles in this, then (off the heat still), added the already cooked lobster pieces and the truffle oil. Then it was topped with panko and cooked in the oven until bubbly. At the end, a few more drops of truffle oil was added.

Amy's Bakery. Got a chocolate cake for my boyfriend's birthday -- exceptional. Comments I got were "This is the best cake I've ever eaten." I was beyond impressed.

Tofu spread recipe, in place of cream cheese?

I never thought I'd be a tofu spread convert. But someone bought some from the deli and I spread it on my bagel. It was fabulous. Didn't even miss cream cheese.
So.. does anyone know how to make this tofu spread in place of cream cheese? I found a few recipes but they are all very different and I'm confused. Thanks for any help!

red beans and rice in crockpot

I tried this too-- my beans cooked 10 hours on low and were not tender at all. I just transferred them to the stove to finish them.
Anyway, I haven't done a redo yet but next time I do, I will cook them on high. I think that may be part of the solution. Also, as far as your recipe is concerned, take some of the water out. So, yes..I would put it on high and take some water out. Good luck.

I grew up with fried okra and am no newcomer to the veg. But I've had very little pickled okra. I just bought a jar.. do you eat it straight up or put it in salad? What else can you do with it?

Best Peach Cobbler?

Do I have a recipe for you! It's Paula Deen's peach cobber recipe -- it's easy and so good I could have dived in and eaten the entire thing. You let the butter melt in the baking dish and then pour the batter and peaches on top of it without mixing. It creates the best cobbler crust I've ever tasted. I'm going to experiement with other fruits now too.

Per Se critical review

I've been to Per Se three times and each visit has exceeded the last. The service has been impeccable, as has the food. And the staff goes above and beyond to please you.
As far as the salts, I too wondered why we never got salts at our table (and we did get the foie gras supplement). So on my last visit, I asked the waiter if we could have the salts; ta da!

I've had success tempting picky eaters with this recipe for lemon-horseradish fish cakes ( tilapia) from Everyday Foods. I jazz it up a bit with more horseradish and such and serve it with a cajun tarter sauce..
