I don't know if this sounds silly or not but...

I'm fluent in Spanish and wanting to enroll in language classes if I can find anything outside of the spanish speaking world. I am expecting to work like a dog and am looking forward to the dicipline it will encourage. I don't have many illusions about this. I want to work and I am willing to do it for free (or actually pay to do it). Thank you very much for your input. If I find something Ithis will be one of the first places I will post!

I am looking for ways to get a culinary apprenticeship in Europe (or anywhere outside of the US for that matter). Does anyone have any good recommendations on where I should start?

what to do with soft pears

puree with simple syrup, strain through a fine mesh sieve and mix with brandy and soda for a good cocktail.

Wine storage in the tropics

I would like some advice on keeping wine at is best in tropical climates. I live in Costa Rica, and while I can obtain a decent ammount of quality wines, my proper storage capabilities are rather limited. Does any one have any suggestions? I mean, can red wine be kept in a fridge and then brought up to temperature before serving? What should I do? Thanks.

Grim Reaper in a Rice Krispies Box

I think the comment comparing the article to the music world is interesting and it works on a couple different levels I think. One reason why someone might not like a band after it gains some level of corporate popularity would be that their music changes to suit "popular" demand. The same could be said about the organic movement too, I guess.

If you can buy Orgnic Cheetohs and Oscar Meyer Free Range Hot Dogs wouldn't the corporate influence begin to change what is considered organic and what isn't? Will the huge corporations that already dictate how america eats actually be following organic guidelines or principles or will they just be telling you that their product is healthy just so you'll give them an extra buck or two. I am not beating my chest here one way or another because I can see both sides of this argument. I am only posing a question.

Turkish Delight in the Tenderloin

I am sorry for my response, there Robert...I didn't mean to come across like a jerk. I was excited about the meal and was hoping to get some good feed back. I'd like to have it stricken from the record.

Turkish Delight in the Tenderloin

Wow Robert, thank you for avoiding sounding completely condecending! Melanie, it was made from lamb although it looks like you may have to do some detective work to see if that's actually the case.

Turkish Delight in the Tenderloin

Please go and eat at Alaturca and then call me so we can cry on the phone together.

This was my first experience eating Turkish and although it shared many of the same flavors of the other Medditeranean I have tried, this was perfect and truly distinct. We split a sampler of cold appetizers with fresh pide, a Beyti Kebap, and a grilled meat platter. Washed it down with cold turkish beer and waddled our way full bellied and giggling all the way to the bus stop. It isn't very often that I find myaelf laughing out loud about how good the food is so I think it's safe to say that this meal would fall under the coveted "top 10" banner. I would love to hear other's opinions on this place because if all the food in turkey is like this, I'm moving there tomorrow.

PUPUSAS!

If you are loking for excellent traditional pupusas, Balompie is the spot. Super fresh loroco, wonderful oniony refried beans, crispy sweet tamales de maiz fritos, balanced curtido with plenty of oregano and most importantly the perfect pupusas. All served by a super friendly staff eager to tell you how beautiful their homeland is. I highly recommend this restaurant. I will definitely be eating there again before I head back home.

I'm decidedly ignorant about Dim Sum...

Ok so finally, I had my first dim sum experience. We went to a spot called Good Luck Dim Sum in the Richmond District. It was a countered spot so I missed out on the table side service but the food, oh the food. Wrote a full description of the experience at chinesefoodorpizza.blogspot.com. Thanks for the tips and opening my eyes to this genre of eating. It's a new favorite for sure!

Boiling Sausage in Beer - safe for kids?

I would be more concerned about the red no.5 and crazy sugars in the Kool-ade. Aside from the alcohol, beer is a health food what with all of the whole grains and spring water!

PUPUSAS!

Alrighty...went to Panchita #2 and I am coming to you with a mixed review. After being ignored for a good 15 minutes (we were customers #5 and #6 in the restaurant) our "pleasant" young server came to take our order informing us that there were no tamales de pollo, tamales de chancho, avocado, chan, or horchata. We had tamales de maiz fritos which came to the table over fried but still tasty served with sour cream and house made refried beans. Not bad but definitely not the best we'd eaten. Then we had three pupusas: one lorroco and cheese, one bean lorroco and cheese and one revuelto with chicharrones, beans and cheese. The pupusas themselves were actually very good (although the lorroco was not fresh but frozen...so-so). The main proble here was that the accompniaments, as important as mustard is to a hot dog, were substandard. The curtido was pretty watered down with soggy translucent bits of cabbage floating in salty vinegar and the tomato sauce, usually bright and spicy tasted flat and tinny like old canned tomatoes. We asked for chile, the hottest they had. We got a greasy bottle of Tapatio, the king of hot sauces granted, but far from hot. Our overall experience was a 5 out of 10 (and I was dining with a Salvadorian so...I'm coming with a tiny shred of credability). We are hoping, nay praying that Balompie lives up to the reputation it has earned here in town. And yeah I'd nibble on some garrobo legs if I had the opportunity. Is Niman Ranch supplting those now?

One time my mom actually chased down the Edy's delivery truck guy to buy a whole case of Peppermint from him before he took it inside the store...God, I love that woman!

Hey, thanks for the tip (and the compliments). I just may have to head in that direction although I am running out of time here in the area and I STILL have to eat dim sum. Wait what am I talking about? Tacos take the cake. I'll check it out!

I have eaten some of the best tacos...

at a taqueria called el Zorro just across the corner from City Lights Books. Super fresh chorizo, good tortillas, excellent variations on the usual salsas (there is one that is smoky and vinegary almost like NC BBQ...so good) and as many grilled serranos or habaneros as your little gringo stomach can take! Aside from that, a not too sweet horchata. Four huge tacos, two horchatas and about 15 serranos for less than $15 bucks! And the Argentine Classico on TV. I couldn't have been closer to heaven if I was sitting in the lord's lap!

Toro, toro, toro!

Oh wait, I forgot to say that I ate at Blowfish in the mission. I don't know how this place measures up to the rest of the sushi scene here in SF (especially since it is one of those clubby-sushui spots with Techno music and Anime playing over the bar) but I was fairly impressed.

Toro, toro, toro!

So my being a self-admitted sushi wuss came to an end last night when I decided to suck it up and branch out a bit. Among my selections of raw scallop and hamachi collar, I tried the "sliver-of-God-on-a-cushion-of-rice" Toro, the famed fatty tuna and sweet Jeebus I almost fainted. It was worth every penny of the $11 I paid for it (wiping away tear). How, oh how could I have denied myself for so long. I am embarrassed in my new revelation!

PUPUSAS!

They sell lizard here?! I had to pass on the lizard because they were being dangerously over-hunted but would jump at the opportunity if it arose. Locals called it chicken of the trees. Have you tried it? I'm curious.

I did have a Loroco pupusa around the corner on Mission and I too found that more than anything it tasted like green chile. Still, I can't complain. A mediocre pupusa beats no pupusa!

So I can order from any of the blends behind the counter? I just thought those were if you wanted to buy a pound or something. Good to know. Thanks.
