New WF in Dedham

I happen to live on a small island in the Caribbean where almost all the food comes in by ship. Half the time we get wilty veggies and certainly a huge lack of variety. My first stops when I visit the States are to stores just like Whole Foods as well as great restaurants.

So, when I read the reviews here of people being "disappointed" about the produce at WH, the lack of variety of breads, and so on, I have to laugh. I guess when you live in a place that can have a Whole Foods, it makes some people overly nit-picky. Try coming here for a month and shopping and trying to cook a nice meal!

Two days in Fort Worth

I agree with you completely about Joe T's. Our office used to go there yearly for a welcome party for new faculty. Joe T's has almost no menu. You pretty much take what they make that day. The food is cafeteria quality at best. Big pans of Mexican food prepared for a crowd. No thanks!

Cooking lobster tails

Recently I bought a couple tails and using kitchen shears, cut from the non-tail end towards the tail end on the hard shell side. Once cut, I spread them apart allowing the meat to appear almost outside the tail. Next, made a great butter/garlic/lemon sauce and brushed it on. Put them on the outside grill until done and they were great. Cooking time depends on their size of course. Serve with yet MORE melted butter and salt and pepper. Enjoy!

Any cool restaurants for teens in NYC?

I don't have any more suggestions but would like to tell you how well you write and how polite you are. What a joy! Have fun at the dinner.

Hi Everyone,

I've been looking for a brownie recipe here on Chowhound and even on FoodNetwork. All I come up with are brownies that are gooey, filled with fudge, candy, or even un-cooked cookie dough. I'm trying to find a brownie that is more cake-like and yet very chocolaty. I know they exist because I've had them from time to time. Nuts are fine too.

Can anyone please post such a recipe or give me a link that I may have missed? Thanks a lot!

THIN SLICED BONELESS PORK CHOPS: HOW SHALL I PREPARE THEM?

What a great idea - stir fry! Years ago, I made a batch of thin porkchops and to this day I remember that meal. It was absolutely awful - it was like eating the sole of my shoe! Never bought them again.

Now days, I will make a thick pork chop but even it is tricky and dries out if I'm not careful. I wonder how resturants manage to make them so moist and juicy?!?

will salmon keep one day in fridge?

We get really fresh salmon and often freeze it. It comes out great after the freeze. I've had fish frozen TOO long though and that ruins it's consistency.

Justified or just greed?

As I read the study, the issue wasn't where the plate-full-of-food came from - buffet, served, or family style. Once it landed on the man's plate - it was considered "his".

I failed to mention in my earlier post that the authors believed that the men's behavior possibly went back to the cave-man days. They had to have a certain amount of food to do their daily thing. So, it was not a matter of taste, manners or anything like that. It was - have the amount of food you need to get through the day - or, you may not survive!

responding to the question " Is everthing ok?"

I had a humerous experience the other night when eating at a famous Boston seafood restaurant. The server put down our appetizers and turned around to reach for the water jug. Then, automatically, she asked "how are the aps?" before any of us even had time to lift a fork. Everyone got a kick out that, including the server.

Justified or just greed?

Very interesting question and replies. I actually have something to add that has some research behind it to help explain some of the eating differences between people.

I'm a psychologist and recently ran across a research study that looked at peoples' food sharing habits. The bottom line was that women are more likely to share food off their plates with whomever than men. Women were happy to share, offer and take bites of other peoples' food.

Men on the other hand felt and behaved very differently. Their plate seemed to be their territory. When asked, the men stated that when they dished up a portion of food for themselves, they knew how much they wanted/needed and took just that amount. So, if someone else "invaded" their plate and portion by taking some, it really upset them!

Please note that no psychology study ever claims to be correct universally for all people. It is only valid for the group of people in the study. Still, I think it does shed some light on this issue.

NY steakhouse...worth it?

Oh, I absolutely agree with you. I don't even go to Fridays!!!!! Stopped that way back in college. haha!

I did appreciate the taste of the fish, which was good. And, my friend also liked his steak. But the single entre placed alone on a plain white plate looked very plain, very uninspired. I know there are sides to order,but a little plate presentation at those prices is not too much to expect. And, the ambiance was quite like the food - acceptable but way less than enjoyable.

I've just been to BLT Prime -

I must be one of the only people to eat at BLT Prime who was disappointed in the overall experience. Is it me? The food I tasted was good, but nothing other restaurants don't do for half the price. The presentation, and this was my main complaint, there was no presentation. I had the Dover sole - a fish plopped in the center of a white plate - that was it. My friend had a good steak but again, it was plopped on the plate with not a hint of presentation! Incredible! Even Friday's tries to make a plate look good. We didn;t care for the ambiance which was basically sitting in a large non-descript room with too much noise.

My first two wine picks were not available but of course the more expensive wine was. At the end, the total for 4 came to over $400. Would any of us go back? No. This place delivers hype but no heart.

I have to arrive on a train and then head to Logan and would like to know the best/easiest station to arrive at. Probably will take a taxi to Logan. Recently, I bought some fresh trout to home smoke from our fish man and accidentally left it on the counter much as you did, but not for as long. When I discovered the fish, I of course put it into the refrig and started worrying about what to do with it.

The next morning I called our friend the fish store owner and he told me something so obvious that I wondered why I hadn't thought of it. He told me his rule of thumb is not to worry about time and temperature in regards to fish being fit to eat. He simply said, "Open it and smell it, you'll know." I did exactly that and in one second, I knew it had to be tossed. Hope that help in your case.

Christmas Day Lunch in NYC

We spent Christmas day (happens to be my wife's birthday) in NY last year and our plans for lunch became a disaster. So, I can tell you where NOT to go. Please avoid all restaurants in the Waldorf Astoria, i.e. Peacock Alley and the smaller coffee shop. We had reservations for weeks ahead at the Alley for a supposed magnificent buffet. When we arrived they could not find our reservation nor would they let us be a walk-in.

Instead they put us in Oscar's saying that it was a scrumptious brunch. It was not. It was like a typical breakfast-included type meal you can get at a Holiday Inn. Later, I wrote to the General Manager explaining the story - I never got a reply. So, avoid this place!

I don't know if they still allow it, but La Medeleine (sp??) used to allow dogs on the patio - this was their store in Ft. Worth.

We like Balthazar - very French Bistro-ish and always had good meals there. Their Sunday Brunch is excellent too.

Deep fryer cooking oil - advice please!

Hi Everyone,

I've spoken to numerous people including cooks/chefs about how long they keep and use cooking oil in their kitchens. I've looked it up on the Internet as well but am still puzzled. There doesn't seem to be a general rule of thumb like with other kitchen techniques.

Some people say they keep it based on length of time. Others say they change it when it gets too dark. I worry about food particles causing bacteria to grow if the oil is left too long. People tell me that's not a problem because once it heats up, bacteria are killed.

So, I wonder what you do at home when you deep fry with oil? Does anyone throw it out after one use? What are some general rules about keeping and re-using it? Thanks for your input!

Wisdom Teeth Removed. What Can I eat?

Wisdom tooth removal is the pits. I want to make a comment to you that has nothing to do directly with food. Some time ago I had to have an infected wisdom tooth removed. The procedure didn't hurt, nor did my mouth. But, afterwards, my mouth only opened about 1/4 as much as it should have. The Doc, of course, told me that was "normal" and it would improve. A few days later I was still in the same condition so rather than go back to the oral surgeon, I went to my favorite doctor, an ENT (ear, nose and throat) specialist.

It's good that I did. He thought the surgeon jarred a nerve which was causing the mouth not to close properly. He gave me a package of those steroid pills that you take - a lot the first day, then less and less until they are gone. Within 24 hours, my mouth opened almost wide. Who knows how long the problem would have lasted without seeking help. Hope you don't have this problem!
