Can anyone recommend a good brand of ramen to cook at home? I want something that will stay chewy/bouncy that won't become a mass of soggy noodles. I'm not looking for "instant noodles"-type of ramen.

Big Meal, a new Japanese all-you-can-eat with table service

We did try salmon sushi, spicy salmon sushi and the salmon rose. The salmon sushi was good, the spicy salmon sushi was barely spicy and the salmon rose was kind of small (I'm used to 2 pieces of salmon around a centre of rice and this place only used one piece of salmon). We ate everything we ordered and there wasn't anything we detested. I would go back.

Tried this place for lunch on Sunday. Pricing is fair at $11.99/adult. Decor is kind of bland. Service was a bit slow (only 1 server on duty)...there was a total of 5 tables or 13 customers. The food was pretty good and there was a fair selection...our favourites were the fish roe sushi, ramen, shrimp tempura and deep-fried bananas. They serve canned pop (not the tasteless fountain pop). They also have non-AYCE options (bento boxes, soup noodles) that range from $6-9.

Thanks...I just tried baking meringue cookies for the first time and ran into this problem...now I know! They were fine coming out of the oven but I left them on the counter to cool and by the time they did, they had deflated and were sticky.

If using "the oven overnight" method, will they hold longer when left out for serving?

You can make it at home...I've purchased the noodles at large chinese supermarkets.

OK...we gave it a try...won't be back. The decor was dated and dingy. The plates were small and slow in arriving (one dish at a time...we'd finish a dish and sit around waiting for the next one). The servers were rude, not helpful and service was rushed. Pricing was about the same as Maple Yip and Royal.

VIetnamese Stores/ Where do you shop

I usually pick up those items at Nguyen Huong (they have a locations in chinatown (on Spadina), in Scarborough (at Middlefield and Steeles) and I think there's one at Vaughan Mills.

I've seen cha lua and cha chien at T&T at Middlefield and Steeles too.

Lasagna int he Crock Pot

I've been meaning to try this in the crockpot as well. I saw something similar in the Cooks Illustrated Slow Cooking book and they instruct on using an aluminum foil ring around the inside of the crockpot (don't know what thats for though). Did you use your own sauce or a jarred/canned sauce? Did you pre-cook the noodles or use the oven ready type?

Crabs and crab cakes

Does any one have recommendations for a restaurant that serves good crabs and crab cakes? We have 2 tweens and we'll be spending the day at the Aquarium so something nearby and casual would be great. We do have a car so driving is also a possibility.

London, ON - Good Eats?

I tried Quynh Nhi over the weekend...I couldn't believe the astronimical prices! Is that the going rate for a bowl of pho in London! It was $12 and in comparing to Toronto would have been similar to a medium size that should sell for $7.

Secrets in Chinese Restaurant cooking? Specifically like what you find at Congee Star (moved from Ontario board)

You can devein the shrimp by poking near a joint at the tail end with a toothpick and pulling the vein out...that'll leave the shrimp intact.

Filling: make first as the dough will dry out
Fill with whatever suits your fancy, ours is filled with diced pork, chinese sausage, peas, finely diced dried turnip, scrambled eggs & dried shrimp. I also like diced up water chestnuts. This is all diced up and fried, salted before hand so it is room temperature when it is put into the dough. How much? well my mother had a favourite bowl she would fill and I go by looks. Uniform mixture of peas, meat and by taste as well. The water chestnuts give a good crunch and should not over take the saltiness of the meat etc. I usually make this the day before and let it cool and refrigerate overnight.

Dough:
7 oz bag tapioca soaked overnight then drained
1 bag 14oz-16oz of wheat starch
1 tsp/tbsp shortening
boiling water

Make a dough by mixing starch with boiling water. Use wooden chopsticks to mix enough water to form a dough. The dough should be dryish because the tapioca will be wet and adds moisture. Add drained tapioca and shortening and mix well to form a dough. I use a tortilla press lined with wax paper and roll 1 1/2" balls out and press into a circle. Otherwise if you use a rolling pin you make find it works to roll between 2 pieces of waxed paper and if it still sticks I think I grease the waxed paper as well sometimes.

I believe there are hot tables at the Francesca Bakery in Scarborough (Pitfield and McCowan) but I've never tried it. I think I recall someone on here posting about it.
