Kelp Concentrate Extract

Thanks for all the ideas. I kind of understand how this ingredient can be used in my cooking. Didn't realize how nutritious it is. Good stuff. Tried it in soup as a test and it definitely adds depth and savory tastes.

Kelp Concentrate Extract

Has anyone heard of this product? I found it in a Japanese grocery store. Never heard of it and it was relatively expensive so I had to try it. Very savory, pretty much definition of umami. But the bottle is a liter and I'm trying to figure out what to do with it other than add it to soups and dipping sauces.

No luck yet with lard tortillas. I did find a good source for making them yourself.

Looks like if I want good tortillas, I'm going to have to make them myself. Not too bad considering most of the work is just getting the recipe and technique right.

I've been searching for a long time now. I first had them in Porto Nuevo in Baja. They served it with the lobsters fried in lard also. But the tortillas were soft, chewy, fluffy, and rich. Delicious.

Is there anywhere in the bay area that makes or serves these tortillas?

Has Pizzaiolo fixed their seating/reservation system yet?

Has Pizzaiolo fixed there reservation/seating system? The drinks are great (and even better bartenteress) and food almost always good (best pork belly ever when you can get it) but the experience has been so exceptionally negative because all I remember is waiting, and waiting, and waiting for a seat. They seem to have no clue who had reservations and who walked in first. They seem to seat whoever gets in their face the most. It's not uncommon for people walk out in anger because walk-ins were seated before those with reservations who have waited for over 40min. Thoroughly aggravating mess the 4 times I've been and that's such a shame because I like their offerings. I haven't been back for over a year so I'm hoping it's been fixed. I'm also hoping they have the pork belly in again.

What to do with great chicken stock?

So I just made some amazing chicken stock with roasted chicken and roasted carrots and onions. There's a bit of taragon in the roasting liquid but other than that. it's just very rich and deliciously rich stock.

Do anyone know of any interesting recipes that really bring out the stock flavor but also has a complex and multi-layered flavor? I love matzo ball soup and homemade chicken noodle but want want to try something different. I'm new to soup.

Best BLT in the Bay Area

My best BLT was at Eddie Rickenbackers on 2nd St in SF. Early afternoon, barely any customers. It's really a bar but the BLT was perfect. White bread was perfectly toasted(any other bread is not authentic). Tomatoes were ripe and tasted like tomatoes. Perfect amount of mayo. Bacon was thick and perfectly crisp. Oh yeah...the lettuce was fresh too.
