Home Made pastrami

Thanks to all for the help and links.

I am short on time so have selected several recipes with short brine times because we are doing this for a Father's Day Party.

Already have one Flat Brining for experiment #1.

For Number 2 we are trying a dry rub only recipe that uses the Morton's Tender Quick (I think that one is from Virtualweberbullet.com)

I am going to the butcher today to order the 2nd and third pieces of meat. Third recipe uses a short brine with Prague powder, etc. and then dry rub. Will probably go with smaller cuts (or at least smaller pieces) but butcher seems to know what he is talking about so will put my faith in his recommendation and find out by cooking. Would like to do a navel but my understanding is that does require a longer brine so will probably have to skip this time around.

Home Made pastrami

I am going to make my own Pastrami. Have read a lot all over the internet and several brine recipes called for Morton's Tender Quick. I am in New York City (Manhattan); does anyone know where I might find this in a store? Need to start brine on Tuesday for my timing to work so ordering on line will be very expensive with overnight shipping...so trying to avoid if possible.

Any other Pastrami making tips would be appreciated as well.

Actually a Ranger fan...going tonight. We aren't exactly anything to get excited about...Been a long and fruitless Glen Sather era. At least you have a quality GM you can hope will turn things around. Fire Sather!

Fornos was also recommended so may have something there and check out Seabra's Mariqueira too...heading out early!

Best food around Prudential Center?

Looking for a good place (or 2 or 3) to grab food before a hockey game at the Prudential Center.

V-Slice or Straight blade mandoline

I'm confused as to which of these would be "better"... I do realize it is somewhat relative to usage. It seems as though the more expensive models have the straight blade but I have read that they are not very good with softer foods. Do they offer other advantages?

Using Oxo as an example, their straight blade lists for $20 more than their V-slicer, while the V-slicer won their mandoline testing.

Anyone have any info on the relative pluses and minuses for the different types?

Dim Sum and Chinese Market?

My Dad loves authentic culinary adventure so am planning on taking him to Queens or Brooklyn on Sunday for Chinese. Looking for great Dim Sum for lunch and then want to go to markets for ingredients to make a Chinese dinner at home. Any recommendations for the best outer borough chinatown and specific places to go would be greatly appreciated!

Roadfood - NY to Cape Cod

Hi all - Will be driving up to The Cape this weekend...taking 95 to Providence and 195 to 25 to The Cape. Any recommendations for "must have" food, close to the road would be greatly appreciated.

Will be staying in Brewster on Cape so any local recommendations for the area would be great too.

a few questions:

What was the appropriate dress in these places?

What does the cost convert to? Since they don't use lire anymore I just wanted to have a general idea.

And what is the correct tipping etiquette in the region.

Driving through Puglia (Apulia)

Hi

I'll be heading out on a driving trip through Puglia and would love any input on great places to eat and drink throughout the region. Will be in Lucera, Bari, Alberobello, Lecce, Matera (just outside Puglia) and points in between.
