Standing Rib Roast Question

I wanted to follow up and let you know how the standing rib roast turned out. I got a wonderful paste recipe thanks to fourunder's link. I applied that 24 hours before cooking and let it dry uncovered in the fridge. I let the roast sit out for two hours prior to cooking and then seared it in my oven at 500 for 20 minutes. Next step, I put it in my sister's roasting oven and set the temp at 225. We took the roast out when it hit 125 and let it rest for 30 minutes, then carved it. It was really wonderful. The only thing that was a little bit of a downer is that about half the people at our dinner were not hip on eating rare meat. I had to bite my tongue when they put their pieces of meat back in the oven until they were brown . . . Thanks for all the great advice!

Musky_Hunter, Thank you for this recipe. After researching many different ways of cooking a standing rib roast, I opted for slow and low, seared first, with your paste applied 24 hours before cooking. It was very flavorful. The paste made the roast.

Thanks very much for the info. I did ask for an easy-carve cut, which is what you are describing above. So you think putting the roast in a warmed cooler after it is finished will keep it at "ready to serve" temp until it is time to serve - which will be about 2 and a half hours after I take it out of the oven?

Also, would you do low and slow in a roaster oven? That's one of the reccs. in the link fourunder provided above. My sister does have one of those. I cook roast it at 500 degrees in the convection oven and then put it in the roaster oven to cook the rest of the way. Do you think that would give it a crispy crust?

Standing Rib Roast Question

We will be serving a 12-14 lb. standing rib roast on Christmas Eve at my sister's.

I would like to cook the roast in my oven - which is convection and a much better oven - and then take it to my sister's, which is about 20 minutes from my home. We would not be serving the rib roast right away - probably about two hours after I arrive at my sisters.

How would you do this? Cook it all the way (to medium rare), tent it, and keep it warm in her oven until ready to serve? Cook it most of the way at my house and then finish it off in her oven? Any guidance would be appreciated. I have also never cooked a standing rib roast before. . .

Yeah . . . I was trying hard to find a way to write it where it wouldn't be begging for a joke. But I don't think there is really a way to do that ; ) Thanks for the input.

Can wine totally lose its alcohol content? Opened a bottle of 2009 Clos Du Bois Chardonnay last night (our go-to casual summer wine that we've had often this season) and this particular bottle didn't have the lulling effect I can feel after having one glass - even after I had three.

Hello,

I recently had a hangar steak paired with tomato ragout and goat cheese in a restaurant. It was great, and I'd like to replicate the dish at home. I have been looking for a tomato ragout recipe similar to what I had in the restaurant but haven't found anything that fits the bill.

This ragout was jammy , chunky, and a bit sweet. I don't believe there were any other vegetables/meat in the mix but the tomatoes and onion, I believe. There may have been some balsalmic vinegar in there. Does anyone have a ragout recipe that's similar to what I described?

Long Island's North Fork

We are planning a girls' getaway weekend in the North Fork for the end of September/beginning of October.

We are staying in Greenport for four nights and are taking a trolley wine tour one day where the winery visits will be predetermined. We also have one day where we will be driving and selecting our own winery stops and another day when we will take the ferry over to the South Fork for the day - horseback riding, spa, and Channing Daughters Winery.

I am looking for winery stop suggestions. The trolley tour will focus on the smaller wineries. For the day we are on our own (a Saturday), I am looking for spots that offer good wine, music, and other special offerings - like a market or tasting featuring local food artisans/producers - but are not overly commercial.

I'd also love restaurant suggestions. We'll be having most of our dinners in Greenport but would also like lunch/dinner suggestions for Shelter Island/Montauk/East Hampton.

Any suggestions for 10 year Anniversary dinner in Bethany Beach, DE (area) ?

In Rehoboth: http://www.ristorantezebra.us/. I think this is a very nice special occasion restaurant. They've got wonderful Italian food and a wonderful wine list. It's particularly nice in the summer if you can be seated on the porch.

We are renting on Islesboro and would like to do one dinner out on the mainland - Lincolnville or Camden. We're not permitted to leave our dog in the rental so we're going to have to bring him along. Does anyone know of any pet-friendly dining establishments in either of these two towns? If it's a pub or lobster pound that's fine. I know our choices are going to be limited.

We actually went for the lobster bake Friday, and it was not good. The lobster was very overcooked. The mussels were fine, but the side dishes were pretty disappointing also. It wasn't anything like the meals we've had in the dining area. We are having company again in a couple of weeks and plan to take them there (but not to the lobster bake). I'll let you know what we think.

Grew up on Wishbone - French, Russian, Italian dressings. I still like Italian dressing, in general, but the other two are too heav

When dining out, I like whatever best complements the salad I order. I do love the creamy chipotle dressing our local Mexica restaurant serves. I'm not sure how they do theirs but I have made my best attempt to recreate it with pepper, adobo sauce, and Kefir.

My favorite grocery store brands are Annie's and Drew's. Annie's lite honey mustard is awesome. Drew's makes a great Smoked Tomato dressing and a Sesame Orange dressing.

http://www.riversidefarmmarket.com in Oakland: I recently ate here for the first time (for lunch) and the meal was very good. The gourmet market was a nice surprise too. Save this one for a nice day because the deck seating overlooking the river makes the experience.

http://www.aldencamps.com/: This is a camp but guests that are not staying at the camp can make reservations for dinner. This restaurant is our favorite place to take guests visiting us during the summer. The food is quite good and we enjoy having dinner out on the porch. It's BYO.

My family and I are spending a week on Islesboro in late August. What are the dining options? I know the Island Market is supposed to have pretty good take-out pizza and the Dark Harbor Shop serves sandwiches.

Sedona in Bethany is also good . . . and I'd rather vacation in Bethany than OC any day. I think you'll like it. Rehoboth also has tons of good restaurants. Zebras, Nage and the Cultured Pearl are my favorites.
