VEGGIE RAMEN? Does a great one exist?
Although I've never ordered the vegetarian ramen at Ikemen, it is on the menu: Miso Paste + Green Onions + Thin Noodles. There are various veg toppings that can be added for addl cost(s) like: Extra Green Onions $1, Artisan Pesto $1; Zebra Garlic Seasoning $1; Cherry Tomatoes $3; Sauted Mushrooms $3; and Osen Tamago $1.

Aburiya Toranoko has a pretty good selection of Japanese sake (180, 300 & 720 ml bottles) and beer (and a full bar, too). See http://www.toranokola.com/menu/ for a recent lists of food/beverage.
IMO, I find the sushi/sashimi Aburiya Toranoko to be fresh, delicious and usually varied in seasonal goodies. Hisa-san (Hisaharu Kawabe) is the executive chef and itamae who formerly worked at Matsuhisa and Nobu, et al.
The last time I dined at Aburiya Toranoko (two weeks ago?) there was a flight of sake you could order, too.
And, I have a reservation for a sake tasting paired with food for Monday, May 14 at 7PM.

Standard Hotel downtown -- is it worth eating at?
I stopped going the The Restaurant @ The Standard a while ago. The food used to be pretty to very good but the chef has changed soooo many times and 98% of its servers are the WORST (rude, hostile, lazy) that even though I work across the street I will never eat there again.
Kitty-corner from The Standard is Urbano Pizza Bar. With the recent change in chefs a pretty tasty burger is currently on its menu: THE URBANO BURGER @ $13. Grass fed Paso Prime beef, mozzarella, roasted red bell pepper, pesto mayo, choice of house made chips or salad.

Speaking of restaurants in hotels, I haven’t eaten at Orchard ("O") Hotel’s O BAR | Kitchen in months (and it appears that the recipe has changed in the meantime) but the burger used to be delicious: KITCHEN BURGER @ $14. The online menu now says it is: aged white cheddar, pamplona chorizo, anaheim chili relish @ $14. It does appear that O Kitchen is still offering its parmesan truffle tots @ $6. yum!

Where to find Moonshine?
it's my understanding that "moonshine" is going by several monikers these days, such as white dog, white whiskey, unaged whiskey. I've gone to whiskey tastings where white dog was offered up for tasting (and buying) and IMO there's a reason whiskeys are aged … it makes 'em taste good! ;) That said, I've seen Buffalo Trace's white dog @ Bevmo and I wanna say that I've seen Hudson's New York Corn Whiskey somewhere around town and another brand or two but didn't pay too close attention 'cause I prefer it aged some.

Hollywood Chow-ography!
About 1.25 miles east of you is Tender Greens on Sunset just east of Vine (with several other locations in the LA area) which I like for delicious and healthy casual dining or easy takeout.
Tender Greens’ website says that the majority of its produce comes fresh picked daily from Scarborough Farms in Oxnard; beef comes from grain-fed hormone/antibiotic free cows; chickens are raised on the range in Northern California, not in cages; and its tuna is line caught from the Pacific.
Nice patio out back, too.

Sometimes the eye sees what it wants to as i did not read it as work but "word"... I had to re-read 03/10 msg to figure out 3/11's. ;)
I did look up Shunji's new restaurant and, from what I read, it is still in the soft-opening stage. But, I was able to find some pictures of his recent dishes and they look delicious!

while the fish is fresh, it is certainly NOT "mind blowing," but rather assembly line work done in the kitchen (at least at the downtown location) where they bring the plates so fast as to get you in/out in about 1/2-hour.

Pizzeria Olio
I really like Olio, too. I've never been disappointed in the food or service there. I order a different pizza every time I eat there and they're all delicious. I can also recommend the steak bites. Yum. Oh, and Olio brews its Iced Tea by the glass. Just right; it tastes like tea! And, Olio now serves beer & wine. ;)

I once had a problem that I thought needed the owner/mgmt's attention and sent an email setting forth the, ahem, incident and they REALLY cared about what happens there and handled the situation promptly, courteously and professionally.

well, depends on how hungry you are and what kind of parameters you set, if any, and what's in season and so on …
I guess it wouldn't hurt to give the chef a budget if they don't have an omakase set course $, $$, $$$ or $$$$? For me, when I order omakase I just eat until I'm full and hand over my money with a contented smile. ;) Granted, I don’t indulge in sushi all that often these days, so I do it up right when the mood strikes.

Oh, I forgot to mention that the omakase was different each time I ordered it. I don't enjoy taking notes while eating so can't tell you exactly what I had and when but can say with reasonable certainty that I have never had the same meal twice at the sushi bar. ;)

Yes, I have ordered omakase several times at Toranoko's sushi bar. It can get pricey, but I think well worth the $$$. Here lately I've had a hankering for simple nigiri so I've been ordering on my own.

If only the food matched the excellent service.
I wholly recommend Toranoko's sushi bar = DEE-licious! I always order fish from the specials page first and fill-in from the regular menu offerings, if needed. Oh, and the drink menu is really good, too. To name a couple of personal favorites: (beer) Echigo & Yebisu; (sake) Onikoroshi.
