Steamed Vegetable Dumplings (Zhēngjiǎo)

These sound delightful all though I think I'll add more tofu because, well, it's tofu.

Kitchen renovation - How much does a good range cost??

Starting to think about a kitchen renovation, and most sites for high end gas ranges (Blue Star, Wolf, etc.) don't have prices - they just say to visit a showroom or something like that.

I'd like to know in general what the ballpark prices are in for a 48" gas free standing range -

GE Monogram
Wolf
Viking
Blue Star
DCS
Bertazonni
Electrolux

Thanks!

Need recommendation for Vancouver - one omnivore, one veg, one poultry eater!

So I guess we're looking for a restaurant - italian, american - I'd like some kick ass seafood, but we have a vegetarian and a pregnant woman who can't eat seafood....thoughts? Looking to spend about low/mid 20s max on entrees.

Thanks!

Pizza suggestions for NYC visitor

Not really looking for stuffed crust/chicago style. In fact, not looking to eat something that compares to nyc, or resembles it, or reminds me of home. Just want some good pizza!

Classic Buffalo food rec needed

I guess with Lone Star, you get what you paid for. No heat (had to wear winter jackets while we ate), and the food just seemed to lack flavor. Granted I've only been there twice, but I was so looking forward to the last trip after my first one...I loved it so much initially. Maybe it's worth a 3rd trip?

Classic Buffalo food rec needed

Jerry - Yeah, I'm new...well, sorta. Moved last fall, but know of the area from school.

I've been to Lone Star a few times and I feel like the quality has suffered a bit.
Ted's isn't a bad idea.

I've taken him to the Bar Bill for Beef on Weck, but maybe I should try Vizzie's? Are there any other really good tavern's/pubs between the airport and the elmwood area?

Classic Buffalo food rec needed

I know about both those guides. I was hoping for people on here to give their opinions of just good, homey, greasy food. Rappaport's guide is a little too m uch for me here...want guidance!
Thanks.

Classic Buffalo food rec needed

My brother in law is coming to visit next week, and every time he comes we take him to a favorite Buffalo institution, or maybe just a place that knows how to serve good food.

Past places have been:
Amy's Place
Louie's on Elmwood
Santasiero's

So, we're looking for places that serve cheap, good food.
This time we are looking for someplace in Kenmore/Northtowns. Figure we want to take him by Paula's donuts as well.

Any good ideas? Thanks!

Authentic Deep Dish pizza recipe?

Yeah - coming from new york I should have realized my question was too open ended. I guess Im looking more for a pizza where you press the dough into the pan, up the sides, then layer cheese, ingredients, and sauce on top with more cheese. Not sure of that is Malnati's or Unos. I dont care for the 2nd crust on top.

So, that being said, I dont really care right now which specific place it comes from, but more that I produce something that one of the places would make!

make sense?

Ideas on fun italian birthday spot, like Inoteca or Otto

Regardless of reviews, both Inoteca and Otto are fun places to go (in my opinion) and they dont break the bank. Im looking for another restaurant in this vein.

Any ideas? Location not a problem.

Pizza stone question - how to get that black char?

Nice pics - here is one of mine...maybe i just need to cook it longer?

So, heat the stone at 550, turn to broil when cooking the pizza?

Where to buy Udon noodles?

Ok - so ive seen the dried in the bundles, but they look as thick as fettuccine. There is no way they plump up to the thickness of udon, right?

Pizza stone question - how to get that black char?

Yeah - I've read what Varasano has done, and that is crazy.

Is broil hotter than 550? I know when i use broil i usually use the broiler tray, but If i set to broil will it get the oven hotter than 550?

As per the cast iron idea, I actually cant use it because of the following that I do:
I prebake the pie on a metal pan that is on the stone. As soon as the dough sets and slides I slide it onto the stone. This allows me to have MUCH larger pies than I could if i just make it on a peel.

Where to buy Udon noodles?

I love those thick, fat, almost pencil thick noodles in Udon soup, but I can not find it anywhere! Are they sold fresh, not dried? I live in NYC, if that helps.
Thanks!

Pizza stone question - how to get that black char?

I've been making pizza at home for quite some time now, and I do all the usual things - heat up my pizza stone at 550 for a good hour or so before adding the pizza. I am pretty satisfied with my results, but I wish I could get that black char around the crust thats so synonymous with coal oven pizzerias. Maybe it's not possible in a gas home oven?

Check out this pizze - http://www.foodinmouth.com/general/20... Could it have been made at home? How do I get the black bubbles?

Im thinking this - I have my pizza stone on my bottom rack. Maybe I should heat it on the bottom then move it to the top rack? This way the top of the pizza will be closer to the top of the oven where it is hotter?
