Thai recs for andy huse- Tampa Bay

Stop by the Thai Market and Kitchen. Besides being able to pick up everything you need to cook Thai at home, on Saturdays they cook a lot of home style type foods that you usually don't see elsewhere. It's been a year or so since I've stopped in. I think it's worth the trip. Here's the web site.

Buying Ghee Around Brookline/Allston

Ghee is easy enough to make. It is basically clarified butter that the milk solids have been allowed to brown before being removed. Here is one explanation that I've found.

To make ghee, use good quality unsalted butter. Place the butter in a pan and let it melt and simmer on the lowest possible heat. In the beginning it will make a lot of noise, the butter will look thick and cloudy, and a foam will appear on the top. In the first five minutes occasionally give the liquid a gentle stir to allow all the water content to evaporate, and then leave the liquid to continue simmering for a further 15 minutes. Slowly particles will sink to the bottom, the foam will settle on the top and in between the pure butter oil will become clear.

When the sediment on the bottom starts to turn brown, remove the pan from the heat, skim off and discard the foam, cool a bit then strain the liquid through a very fine sieve or several layers of muslin into a airtight jar.

Your response here seems a bit cavalier. In the long run, many things won't "matter". This doesn't mean that Sherri shouldn't feel hurt by what's just happened? I mean, if someone walked up to you and hit you in the chin with a big stick, your first thought as you crumble to the ground won't be, "In five years, will this matter?" Though, if there's still has an axe to grind in five years, well...

It's a new year. What are your favorites?

Here are a couple of mine.

Delicious Chinese at the Yummy House at 2202 W. Waters. Over the weekend, I had a terrific light meal of West Lake Beef Soup and Fried Calamari. Lunchroom atmosphere, but very good. Try the Spicey Seafood Hot Pot. Watched many attractive and aromatic dishes pass by on the way to other tables. Call in advance on weekends.

Staying with China, try China Yuan at 8502 N. Armenia Ave. Newly remodeled. Also, very good.

Dined alone. Tip added to bill!

I was in Miami last weekend. I stopped at a nice "upscaley" restaurant a short distance from my hotel for dinner. When the bill arrived they had already added an 18% gratuity, with a suggestion to add. I consider myself an above average tipper. I enjoy fine dining and dining alone when I'm out of town or when my wife is out. I thought this was irritating and presumptuous. I've seen gratuities added for large parties, but never this.

Great Chinese in Tampa!

Not that it will do any good at this point, but does anyone remember China Yuan when it was Wong's? When Wong went back to Hong Kong it was a sad day for Tampa dining.

Detroit. Coney Island?

I grew up in Dayton, so I've eaten my share of Cincinnati chili. I can still find frozen blocks of Skyline here in FLA., but haven't been able to duplicate the same fluffy cheese you can get at Skyline or Goldstar. But being around Ohio for so long, I don't recall seeing any "Coney Island" restaurants. At least not in the name. Thanks for the info. Now, how to deal with this craving for a 5-way, chili dog, and a Hudepohl 14-K!

Detroit. Coney Island?

Thanks for your responses. Just for your info, the "Coney" place we went to was called The Senate Coney Island Restaurant in Northville. They took the restaurant space at a local golf course. Obviously, there are no chow revelations here, but the place was very clean, friendly, and the food was good. The owner obviously takes a lot of pride here. I had over easy eggs with gyro meat and a side of pancakes. (First time having gyro meat with breakfast. It was pretty good.) I can't speak for the rest of the menu, but I wouldn't hesitate to go back. Golf courses are notorious for lousy food, they should all be at least this good. Oh yes, full bar too.

Good eats near Henry Ford Museum

Thanks for the suggestions. I was in Detroit last weekend. Went to the original Shish, pretty sure it was on Michigan Ave. Excellent bread and Humus. Everything else was good. To our disapointment Miller's was closed on Sunday. Was in a time crunch ended up at Cheli's Chili Bar just down the street. Ordered the chili because of the joints name. Not good, more like a tomato and bean soup with chili essence. Had a burger as well. It seems like most sports bars/ restaurants ask you how you want your burger then send it back well done regardless of how you ordered it. Cheli's Chili Bar is no exception. Some at our table felt the bacon on their BLT's tasted livery.

I was in the Detroit area over the weekend. Everywhere I went, there were "Coney Island" restaurants. I went to one place for breakfast it had mostly diner type foods with a Greek focus. Not much of what I would consider "Coney Island" food at all. What's the history of all the Coney joints in Detroit?

hardest reservations to get?

I went to Babbo about a year ago with my wife and a couple of friends. I love great food, but am not a great restaurant aficionado, so I was a bit anxious about going in. We asked the waiter to make suggestions on the menu and gave him our wine budget. He was very helpful, and set us up with delicious food and wine. It was a terrific experience. We had considered the tasting menu, but the waiter suggested otherwise. He said that the number of wines served can be overwhelming.

Here are a few of our favorites.

Linguine with Clams, Pancetta and Hot Chiles
Mint Love Letters with Spicy Lamb Sausage (sounds corny, but wow!)
Sweet Potato “Lune” with Sage and Amaretti
Grilled Lamb Chops “Scottadita” with Eggplant “in Scapece” and Lemon Yogurt

We also had braised beef cheeks. (That item was not on the menu)

Have a great time. I'm sure you will have a memorable meal.

Restaurant cookbooks

Al Forno's Johanne Killeen and George Germon have a book titled "Cucina Simpatica, Robust Trattoria Cooking". I made a baked pasta with rapini, pancetta in a spicy tomato cream sauce. My dinner guests went bonkers over it. There is also an excellent section on making their famous grilled pizza. The book is available through Amazon. Highly Recommended

Restaurant cookbooks

I have cooked some delicious meals from "Charlie Trotter Cooks at Home" Try Lobster and Sweet Corn Ravioli with Sweet Corn Broth, or Poached Beef Tenderloin with Fingerling Potatoes, Brussels Sprouts, and Beef Broth. Also "Chef Paul Prudhomme's Fiery Foods That I Love" is a fun and delicious book to cook from. I just made Curried Shrimp from that one. Fantastic.

First time post - Bringing Mom to NYC

Mario Batali's Babbo is a terrific dining experience. Start calling the reservation line now and keep hitting re-dial until you get through. Last time in NY I had a great vegetarian dinner at Gobo. There are two locations in Manhattan. We ate at the 1426 Third Ave. (81st St.) location. It's close to the Whitney and Metropolitain Museums.

Pasta "Capunti"

I picked up a pasta called "Capunti". It's a short pasta (inch and a half long) that sort of looks like a small canoe. What type of recipe or sauce would be best with this?
