Medium High indirect heat, I turn on the front flame and place the bacon in the back to prevent flare ups. Then turn it a few times while it grills. It takes about the same time as frying it in a pan.

Bacon cooked on a gas grill is my preferred way of cooking it. And when I fry fish, I'll often use an electric skillet on the patio to keep the smell out of the house.

Yes, the recipe on the Libby pumpkin can calls for 425 for 15 minutes then down to 350 for the rest of the time. Other recipes typically call for 350 the entire time.

"Healthful" baking/desserts--best cookbooks?

In an attempt to keep my cholesterol down, I bought this book (Olive Oil Baking) and so far, it's very good. She usually uses a mix of white and wholewheat pastry flours. Most of the recipes are based on nuts and fruits. I was worried about the texture of butter-less cookies, but I made the Apricot Almond Chews last night and they really are chewy. I warned my usually-picky daughter that they were "healthy" (I used eggbeaters too), she went ahead and tasted them and now has nearly finished the batch.

I make the potato rolls from Bernard Clayton's bread book for all my family gatherings. There are usually arguments at the table about children filling up on the rolls and not eating anything else! (Those same children get a dozen for their birthday with instructions that no one else is to eat them)

This isn't a classic garden reference book, but it has me planning next year's seed order and rethinking how I do everything: "The Seasons on Henry's Farm." This is a spectacular book, everyone I've leant it to has bought her own copy. Highly, highly, highly recommended!

Spokane and 'environs' - Seeking recommendations

For your next trip, try a brand new place that I really like so far, Italia Trattoria (where Cafe Marron used to be across from the Elk). The women who run it used to work at Luna. Great brunch and lunch (what I've had so far), dinner looks just as promising. Lovely, small space with garage doors that open up to create a patio during nice weather.

Suggestions for a summer soup?

I just made Corn Soup with Avocado Cream and Cilantro from Suzanne Goins' Sunday Suppers at Lucques. It was really good, I served it just slightly warm. If you search for the title here on Chowhound, you'll find a thread that discusses it and gives the recipe.

Question on restaurants in spokane with good crab pots?

I would stay away from Clinkerdaggers. It's mysteriously popular, expensive, and not very chow-worthy. I haven't had a seafood pot at Scratch, but have eaten there several times and alway been pleased.

Spokane Food Delivery Options

There aren't very many places other than pizza that deliver in Spokane. Oddly enough though, if you google it, you'll find a service called Food to You, and Spokane is their only Washington market. I've never used them, but they appear to have a good sprinkling of (usually chain) restaurants in the area from whom they'll deliver.

Easy to make, no special ingredients, and always get wolfed down by my vegetarian friends - gougeres.

Breakfast in Spokane?

Yes, it is Frank's Diner. Other good places that are similar (good basic breakfast) are the Perry Street Cafe and the Cottage Cafe in the Valley.

What is the last new recipe you tried, and how would you rate it?

One of those nights when I had limited food in the fridge, but I had everything in Pasta with Fried Eggs, Caramelized Onions, and Bacon from Epicurious.com. It was really good, you fry the eggs before tossing them with the other ingredients so it's carbonara-like, but deliciously different. My daughter and I inhaled it!

Question on pullman area

There is a restaurant in Moscow called West of Paris that I've heard wonderful things about. I plan to make a little trip down this summer to check it out, let us know if you try it. And the Moscow coop and farmers market are great.

Another little oddity is a restaurant in Dayton (about 65 miles down the road from you) called Patit Creek. It's very surprising for the area and quite good.

Kitchen cabinet help, PLEASE

I ended up with Canyon Creek too, after consulting with a local kitchen designer. They do "custom modular" so you basically specify what you want (including quality levels) and they build it for you. I'm not far from the factory so the shipping was reasonable.

My cabinets are also Shaker and quite plain. I love them. I also love some of the gadgets I chose, especially a 3 level rack that spins around inside a narrow cabinet. I keep spices in it, and if I stand on a stool in front of it, (I'm vertically challenged) I can quickly search through the whole cabinet. I also opted for heavy duty pull out shelves in my lower cabinets that let me nest heavy pots and pans and get to them easily.

Ongoing Spokane reviews

Huckleberry's has been the only option for Spokane for quite some time, and I agree with gmm that their quality can be spotty.

A new coop, called the Main Market just opened at the corner of Main and Bernard downtown, I'm really excited that there'll be another option. In addition to organic produce and groceries , and a promising looking deli, they also have lockers for rent that could be used for storage of large purchases of meat. They're still just stocking their shelves, it remains to be seen what their meat selection will look like. I know they intend to establish relationships with providers and facilitate and provide a delivery point for bulk meat purchases.

Asian groceries in Spokane?

When you Google "Asian Market Spokane" you get the 3 I know about: Bay Oriental Market on Sprague, Oriental Market on Trent, and Oriental Food Store on Division. (I like them in that same order) I haven't gone specifically looking for Japanese products, but have gotten Malaysian and Chinese items I didn't think would be found in Spokane. I still go to Uwajimaya a couple of times a year to stock up, but these other places can often fill a need when World Market or a large Safeway doesn't have something.

dog friendly restaurant patios in Spokane, Wa

It's true that dogs aren't allowed within the fenced areas of patios -- if you're here before Labor Day, there's a great little coffee place with snacks that welcomes dogs in Manito Park, between the duck pond and the perennial garden, it's called the Park Bench.

And just a few blocks away on 18th, the Rockwood Bakery seems to let people sit with their dogs on leashes at the outdoor tables. They're good for breakfasts and light lunches.

I would never pay $35 for a grocery tote bag. When I decided to stop taking plastic bags, I started picking up strong and attractive totes during my forays into thrift stores. I have a great collection in my car -- Most of them cost 89 cents apiece, a few really high end ones were as high as $3.

Spokane: walking distance from Gonzaga

Yes, there is a Starbucks nearby, on Hamilton. There's a really good local pizza place right on the edge of campus, David's. And there's a good local burger place within easy walking distance called D'Lish's. Oh, and he'd be close to a wonderful (but quite divey) donut bakery, Donut Parade, also on Hamilton.

A few months ago, my sister and I were crying on the phone about the dog I had just had to put down. She told me that, years ago when she was driving her dog to the vet for his last visit, she kept slipping him the chocolate that he loved, and he happily gulped it down.

After my puppy (18 year old, but still my puppy) was gone, I kept saying "Where's a dog when you need one" when I dropped an egg or some cheese on the floor, or when a mac and cheese pan needed to be licked.

I don't know what to call the style. They aren't the tiny ones, but not huge. A fairly substantial masa layer and a pork filling. The family making them is from Northern Mexico.

If you're making many of these, you might want to make your own sweetened condensed milk rather than buying it:

Combine 1 cup instant nonfat dry milk solids, 2/3 cup sugar, 1/3 cup boiling water and 3 tablespoons melted butter in container of electric blender. Process until smooth. Store in refrigerator. Makes approximately 1 cup, about the same amount as a can of the commercial type, but at a much lower cost.
