using a lead to shuck oysters

i thought this would be the best board to inquire about oyster shucking. is there a risk of getting lead into ones system from using a oyster lead to shuck on?

Any word on Sara Roahen, former food critic for Gambit?

I have read a few chapters of her book, and have to say that there was a lump in the back of my throat the whole time... because I was gagging a bit from how pretentious it was. She wrote for the Gambit and didn't care to stay in the city after the research for her book was done. It really felt like she was interviewing with a book deal in mind rather than out of sincere interest. What did you all think about it?

Excellent job. The thing that really makes all the other shows about N.O. so bad is that they all try to sum up N.O. food. NR followed a stream of conciousness that told his story instead of pretending to know the whole story.

Pascal Manale or Casamentos?

PM may have been the 1st to do bbq shrimp but they are certainly not the best, over the years they've switched from butter to liquid margerine. you will wait at Casamento's, but it's worth it. If you do go to PM stick to the raw oyster bar.

Great new sushi buffet on St. Charles

I Soooooo want this place to be successful, but unfortunatly it is not yet so. So, upon entering I smelled a bit of fishiness which i told myself was wafting in from the dumpster. When I went to the hot food section i got chicken that was not much warmer than room temp, and tasted like it had spent a few days out... well, about 10 hours later i was over the toilet for a couple of days... for a young buck like me it was a much needed post holiday diet, but I would hate for that to happen to a child or senior. Yes, I contacted the restaurant; and the health dept.

Revellion

Not sure. But, if there is, those outside of the French 1/4 aren't allowed to say. I just found out that the word "Revellion" is a copyrighted name. A friends restaurant recieved a call from the French Market Corp. saying that they weren't allowed to use the name as they have the rights to it!?! I know you think I'm full of it, but call them and find out for yourself.

Report Emeril

So, what is the drill with what can and can't be said about Emeril? I feel like I'm at a Bush press conference on this post. I only said what was true about him (he's a great cook) and what he's done for New Orleans (PR for his interests). I believe i am being realistic, where as my post gets deleted (by who, and why?). Just curious, so I don't step over the line again and offend anyones sensibilities.

Emeril's Restaurants

I agree with Emerils - if you must. There are alot better restaurants (and chefs, i.e. Paul Prudhomme) to support in the city. Try K-Pauls! It'll tastes better on the palate - and the soul.

oysters: what is the verdict about the best place to get them?

I stumbled on this place 1/2 hour outside of our fair city. The Oyster Rockefeller soup makes it worth a trip. Mostly just local fishermen go there for a fancy meal - the foodies haven't found it. here's a video about them:

Just thinking about the Andrew Zimmerman segment makes me laugh out loud:
They don't show Brett Anderson's face (our food critic), but they let you hear his Kooky laugh. It always reminds me of how the NY restaurants had the picture of the Times food critic, well here there is an audio recording in the servers station that has a sign "if you hear this laugh please let the kitchen know, thanks."

Yes! do Flour Power for the cake. Excellent city to elope, Go to one of the grand dames... but stay away from Antoines. The food is average, and they don't like "foreigners". Have a great time!

Irene's Chicken Rosemarino [Moved from New Orleans board]

an easy recipe to eyeball:
olive oil, crushed and whole garlic cloves (no granulated), rosemary - fresh!, chicken base in place of salt, pepper. marinate for no longer than 10 hrs. add white wine before cooking (mixture should come about 1/2 way up cut chick in roasting pan skins side down). 500 strong convection oven brown, flip- add bit more wine, brown, done.

Is Emeril's Worth It?

If you are on a budget Do Not go to Delmonico. It is Emerils most overpriced restaurant - and i've never heard anyone call it a favorite of the Emeril trilogy till this post. G.W. fins serves all but a handful of entrees with the same butter sauce with different additives... not very interesting. dig a little deeper and you'll find all the places we love and hide from the masses.

I got the info from an insider a couple of months ago. It shouldn't be too hard to find out talking to the right people... I dont want to build a buzz for the place because it was dispicable how they kept the restaurant from opening anywhere but the lobby of the hotel just so they (hotel, not Rene) could collect biz-interuption insurance... I have a huge problem with any property that has the gall to pull that claim for 2 years (thus raising the price of insurance for legit establishments).

La Provence

Finally, went across the pond to try out the new garde. We had a fabulous experience. They have an "express" 3 course that one person had and was great! The bread pudding was like a custard (thats a good thing). And the wine list was balanced in price and selection (had a great bottle for $45). The mini farm out back was pretty cool to see too. The only thing i really missed was seeing Chef Chris charm the dining room.

They started kinda rough, but by last report it seems like they got it together more or less. personally, i'd chance the hilton before having to drive through the strip mall, it always makes me a little sick after a great meal.

I admit upperline is a bit overrated... but please give examples of why you think Bayona is. I go there often, and have never had a mediocre or inconsistent dish. Susan knows about that "magic word consistency" better than anyone else in town.
