Foods you dislike buying—but sometimes need to

I grow parsley for that exact reason, you have to buy so much and most of it ends up in the trash. Yes, I've done the "put in water, cover w/plastic bag in fridge" but it takes up a lot of room. I can't leave it on the table as my cat will knock it over, so, I grow it, in the summer, anyway.

That's because it was plastic! I've had the all metal one for at least 10 years and it's like new.

I bought one at Bed, Bath & Beyond at least ten years ago. It is made entirely of metal, it must be stainless steel as I have put in the dishwasher many times, and it still looks new. The name on it is AMCO Houseworks. It's really heavy, probably weighs a pound. It not only slices, it also makes wedges. I slice mushrooms with it, as well as eggs. In my opinion, it's an excellent tool. I hope you're able to find one. If I remember correctly, it cost about $15.00, which seems like a lot, but you do get what you pay for!

You know you're a foodie ("food nerd", "chow-der", etc.) when.....

I used to schedule my cats vet appointments around the schedule/sales of the Italian grocery across the street. After the appointment, I would ask if I could leave the cat (in the carrier) in the office for a few minutes while I ran across the street. (I didn't want to leave them in the car) My vet had studied in Italy, he fully understood!

Dialysis and Diabetic

For a renal patient, phosphorus is public enemy #1!. That means watching all dairy, whole grains, fiber and, as I said before, what's healthy for the general public is absolutely not good for a kidney patient. Also, anything that is liquid at room temperature is to be restricted. I know the basics and more, I am hoping to hear from people who are "in my shoes" and what they make/buy. It's important to get enough proteins, without too much harm in regards to dietary restrictions. My husband is picky, (sigh) so I am hoping for "miracle" ideas. Hopefully, there are some out there. Thanks for your concern, I will add to what I know, or want to know.

peeling FRESH eggs

Have you ever tried the Jacques Pepin method, as I call it? Start your eggs in cold water, bring to boil, cover, remove from heat and let sit for about 15 min. Drain off the water, return eggs to the pan, and toss and swirl to crack the shells as much as you can without beating them up. Add cool, not cold, water to cover, and let them sit awhile. The shells usually slip off pretty easily, regardless of the freshness.

Dialysis and Diabetic

I, too, am happy to see this board, as my husband is a dialysis patient, and also diabetic. He loves good food, so I am hopeful that some chowhounds can help me expand his choices. The diabetes is under control, but, as a kidney patient, all the rules change. What's good for the rest of us, is not good for him

Polished Cast Iron--The Way It's Supposed to Be

I looked at it and I don't know if it is 'ground and polished" Never heard of that. However it looks to be beautifully seasoned. My cast iron, which I inherited from my mother, has the feel of satin. It's Wagner Ware, and I admire it every time I use it. I have seen the Lodge pans that are mentioned so frequently on Chowhound, and I don't understand the roughness. But, I guess I'm just lucky to have what I have. I have to imagine, that, in this case, older is better.

Funniest thing you seen in a restaurant?

My sister started calling that behavior "Who had 'Fruit Cup'" years ago, to this day, we joke about it and also say that we don't want to play "Who had 'Fruit Cup.'"

Best oven brisket recipe

Season both sides with salt and pepper. Brown on both sides in a little oil. If you have a dutch oven that can go from stove top to oven, even better. Add one bottle of chili sauce, the kind that's like ketchup that you use to make shrimp cocktail sauce. Also, add 1/2 bottle of water. I like to add a sliced onion as well, but that's optional.
Cover and cook at 325 for about an hour per pound of meat, until fork tender, checking after 2 hours. It smells absolutely heavenly and you won't be able to stand it waiting for it to be done ;-)

Care for Cast Iron (I need to get rid of the fish smell)

If it is a well-seasoned pan, wash it with soap and water - yes I said soap!!, rinse and dry well. Put on stove top at medium heat for 5 minutes, until hot, but not screaming hot, remove from heat and wipe with a teaspoon or so of vegetable oil, using a paper towel. Let cool completely and wipe away any excess. I "condition" my cast iron this way just about every time I use it. The thought of only using salt or just wiping "skeeves" me. However, my pans are over 50 yrs. old and really well-seasoned.

What non-food/non-traditional food items did you eat as a kid?

Paste, erasers, suck the nectar from violets, play doh, birthday candles, and my sister used to make me eat dog biscuits, we didn't have a dog, she had to get them from the neighbor!

It's for dinner. Yeah, I'm finding out about the closed on Sunday thing. We have a car, so it doesn't have to be downtown. I was thinking about Newport/Covington. Any fun places with good food? We want to have a few drinks and a good meal. How about Mt. Adams, or any other surrounding areas?

How to store sweetened roasted nuts?

I put them in the fridge because I thought they might spoil because of the butter. They don't get soggy, of course they don't last long with me around anyway ;-)

How to store sweetened roasted nuts?

I make sweetened roasted nuts by tossing them with a melted butter, brown sugar and salt mixture, then roasting for about 10 minutes at 350. I have only made them for myself and stored them in the refrigerator. I want to make some for Christmas gifts. Can they be stored at room temp. and if so, for how long? Or, if not, do you have a recipe that's similar, and safe at room temp? Thanks!

I would just ignore that. Just rinse & make sure there's no stones or foreign objects. I find a lot of odd & incorrect instructions in recipes I print from the food websites.

Hey, I just found out that Stehlin's meats in Colerain carries Huisman turkeys, so that may work for me. Jungle Jim's is charging 4.99/lb. which is too pricey for me, Stehlin is 2.55/lb. Thanks for the tip.

Cincy hounds - where can I get a GOOD turkey?

I'm not a lover of turkey, but the rest of the family would like one for Thanksgiving - haven't made one in about 4 years. Where can I find one that's not enhanced that might actually have some flavor. I want to brine it, so a good brine recipe would be appreciated. I live near Jungle Jim's, so I know that's a good place to start, but since I haven't bought a turkey in a while, I'd like to know what the rest of you like. Thanks.

Your favorite London Broil recipe?

I love the marinade recipe I found on the bottle of McCormick Montreal Steak Seasoning. It's 2 tsp. seasoning, 2 tablespoons soy sauce, and 1/4 cup vegetable or olive oil. I mix the seasoning and the soy together and let it "bloom" for a few minutes, then add the oil. I pierce the meat and add the marinade and let it sit for a couple of hours, or more. There's no acid to speak of, so it won't get mushy if you let it go a long time. Also, I only make half the marinade recipe, as it is enough for a 1-1/2 - 2lb piece of meat. I also make my own Montreal Seasoning from a recipe I believe I found here. I can post it if you are interested.

We'll be in town during the Taste of Charleston, Oct. 8 & 9 2011. Has anyone been in the past? What are your thoughts? The cost to get in is $15.00 in advance, $20.00 at the door, for each day. Does this cost cover your "tastes" or are they additional? How late does it run? The website says the doors open at 10:30 am, but I can't find a closing time. Is there a bar, or just soft drinks? Is it usually mobbed, so as to be more of a hassle than a fun time? I'd really appreciate your "professional advice." Thanks!

food prep tragedies

My sister was going to make a big, long sub for a Superbowl party. She had actually found some halfway decent tomatoes to put on it. They were on a tray on the counter. The morning of the party, she woke up to find half of them on the floor, half still on the counter, and all of them were mangled and chewed beyond saving. Apparently the cat thought they were pretty good too!
