Annual (or so) sour yard-long bean query

Liana, I know this is an old post, but I had to write you because I have also been drooling for the same dish for years - I thought I was all alone in the world! I also had been trying for years to reproduce it with the same results as you. I live in Mexico City now, but can get all the ingredients. My friend finally got the truth out of them, i.e. that the beans are pickled, not simply dressed in vinegar- in fact, she said they told her there's no vinegar at all in the dish, which surprised me. So, anyway, on a recent trip to NY, (June 2011) I went back to the Grand Sichuan, which, thank Buddha. is still there, for the first time in probably 10 years, and ordered it- was just as good as I remembered. The thing we'll never be able to do, is to get that sort of roasted flavor they get- because they have a super hot restaurant wok.
I'm glad to see there are kindred spirits out there...

Bogata, Colombia, rec's

I am also replying to this. I am a professional food critic and writer based in Mexico City .
I'll be in Bogotá 3 days, beginning of December and would like recommendations. I am more interested in 'comida típica' (we have Gastón Acurio's places here too). And certainly don't care about fancy, unless it's really worth it. Thanks in advance for your help.

Martha Ortiz Chapa, owner of Aguila y Sol, has reopened. The name of her new place is Dulce Patria, also in Polanco, and connected to the Las Alcobas hotel.

Pulque in or around DF

There are no 'trendy' pulquerías in that the ones that have become popular with young people recently ARE old tradtitional ones. Most small ones are, unfortunately, dismal dives. And there are only a handful still operating in central Mexico City. The writer who claims you will find "lots of pulquerías" anywhere, probebly hasn't been to the city in 20 years. I can only reccomend La Risa, Los Duelistas and La Hortensia. These are easy to locate so I don't include addresses. The google map above is dubious...

Best Ceviche in DF?

I recommend a fairly new place, La Veracruzana, Medellín 196, corner of Chiapas, behind the Plaza Insurgentes in la Roma. It is inexpensive, unpretentious, cute and serves very good quality ceviche. I will be revewing it for the News next week.

Also, Delirio has closed.

Bariloche is good - it is actually Urugauyan. Our neighbor who is Argentine, likes La Casa de Buenos Aires, and so do I.

NYT DF Recommendations - Feedback?

Malverde is a tacky bar, the kind that in New York we would have called "bridge & tunnel", and it moved to a new spot, further away from where I live, thank God! I'm not sure some of the others you refer to as they are spelled wrong, but el Tizoncito is very good.
Take those "36 hours" articles with a grain of salt, they are often written by people who don't really know the cities.

I believe the name has changed and it is called something else now - probebly you were looking at old websites. I never thought it was very good.

Best Torta in DF?

Tortas El Cuadrilátero
Luis Moya 73, near Ayuntamiento, Centro

La Texcocana
Independencia 8-A, near Balderas and the Museo de Arte Popular, Centro

Don Polo
Felix Cuevas 86 (near Av. Coyoacán) Colonia Del Valle

These are a few that are in my book. Also very good is La Torta Brava, on the south side of 5 de Mayo, near the Zócalo, in business since 1940.

Oaxacan Cultural Fair in Mexico City - great food!

The fair is actually outside of the tacky mall, I don't think it has anything to do with it. I had finger-lickin' mole negro, smoky, only slightly sweet. We were offered a sample plate of all the moles - the amarillo was especially tasty. And the tlayudos con asiento, at the next table, looked fabulous. But how much can you eat at one sitting?

Oaxacan Cultural Fair in Mexico City - great food!

There is a special Oaxacan cultural fair going on now through September 14th, 2008. There are several huge restaurants set up serving all the typical Oaxacan specialties as well as many small stands selling moles, cheeses, chiles etc. and crafts. It is located outside of a big mall, the "Plaza de las Estrellas", at the Circuito Interior and Av. Marina Nacional, not far from Polanco. You can reach it by metro (Normal) as well. Well worth it for the food. We ate there yesterday - all 7 of the famous moles were on the menu!

Paris query: looking for old traditional places

I will be in Paris, which I know quite well, for my 50th birthday. I really am not interested in Michelin stars, young chefs, endroits de mode, etc. I would like to eat some of the old standards but done as they should be done: Frisse au Lardon, Confit de Canard, Coq au Vin, Cassoulet, Bourride, Choux Croute, Ile Flotante. And I would like old-time "Amelie" Vie en Rose anti-hip ambience. It's not that I am not knowledgeable or sophisticated about food (I have written a restaurant guide) it's just that I have not had the old standards/cliches and I like "real" food, or, as Julia said "food on a plate". And I would like to conserve my ridiculous anachronistic imaginary vision of Gay Paree intact. Can anybody help me?

BUBBLE TEA IN MEXICO CITY...

Try Mikasa, San Luís Potosí no. 170, near Monterrey, Colonia Roma. If not, there are some Korean markets on Hamburgo in the Zona Rosa, west of Sevilla. The only other possibility is Productos Orientales, corner of Division del Norte & Londres, in Coyoacán.
