larks' tongues?

So for reasons of plot, I need to make something that can pass as larks' tongues in aspic. I'm thinking of little slivers of salmon in aspic, over ... something. Any suggestions? As an appetizer?

Servers who pick up dishes but not flatware between courses: was I rude to bring this up?

My father of blessed memory was an Elder and Distinguished Lawyer who had Standards. He was also a devout and committed churchman. And the one thing that drove him craziest was when, at church dinners, the servers would instruct him to keep his fork for dessert. He didn't want a used fork with garlic or gravy or salt on it for his pie, he wanted a clean fork. Was that so much to ask?

Tell us about your Thanksgiving disaster

I had ordered a farm raised turkey "in the 16 pound range, please." What I got was 26 pounds.

I went out an bought the biggest set of tin snips in the hardware store, and managed to cut out the spine, in a sort of semi-spatchcocked arrangement, but I was afraid to stuff it, fearing it would take about 8 hours to roast, and we would all end up with food poisoning anyway.

So after it had roasted for 4 hours, I took it out, and put the stuffing in the bottom of the roasting pan with the bird on top, and put the whole thing back in the oven for the last hour.

But it was a very good juicy turkey, plus I had brined it, and the stuffing came out really reallly realllly moist. Kind of pudding-like, actually. Tasted good, though.

Best/worst Thanksgiving ever...

My poor sweet husband, back before we were together, was living pretty hard-scrabble trying to establish himself as an artist. And one Thanksgiving he celebrated by having not one but TWO Swanson's frozen turkey pot pies for his dinner. Things have gotten better since.

Monavano: Actually, I made a turducken for Christmas two years ago. It was pretty good, and with some careful planning not all that burdensome. But it certainly wasn't the be all and end all of holiday festivity.

My husband likes to ask folks what they have to have for it to be "truly Thanksgiving". (We're both multigeneration United States.)

For a few people, it's just turkey and gravy and maybe mashed potatoes. But most people need more than that. For my husband himself, it's turkey-stuffing-gravy, mash, creamed onions, a relish plate of celery and radishes, and cranberry sauce from a can, with the ridges still on.

The most elaborate answer he ever got is from a friend from Massachusetts, whose daughter is the 7th generation of the family to live in their house (which backs up onto the family cranberry bog). Turkey-stuffing-gravy, creamed onions, mash, three kinds of cranberry sauce, including one with orange peel, a bunch of other stuff, finished off with three pies, pumpkin, mince, and squash, and the squash pie has to be in a square pan. She was a grown woman before she figured out that the squash pie was the last one prepared, and by that time, her grandmother had run out of round pans.

I find that ground beef dishes (meatballs, meatloaf, whatever) always benefits from a little pinch of powdered gelatin mixed in. Maybe I stole this from America's Test Kitchen???

Dinner with friends - should they show up empty handed?

We have a couple of friends, who had to move abruptly and unhappily from a big lovely house to a two bedroom apartment. And during the necessary reduction, packing and moving we pitched in, helped, and fed them regularly. And eventually they were happily reestablished.

And now we are having the kitchen renovated, and don't have a place to cook anymore. So they are having us over every week.

We're friends, ya know. Nothing else really matters.

One pot meals for the summer

Tomorrow morning, they are coming to rip out my kitchen. I am excited about the remodel, but...

I have a downstairs half bath/work room that I will be using as a kitchen for the duration. I have a coffee maker, a two burner hot plate, a toaster, a microwave, and a dorm-sized fridge set up. And a grill outside.

I would be very grateful for any suggestions for one pot/no oven/sheltering in place and yet summery meals.

I have solved the mystery! (Maybe.) Turkey guy not only brought his turkey, he brought his new lady friend, whom most of us were meeting for the first time. And she's gluten allergic. So I think he was trying to make sure she had enough to eat.

Thanks. Your basic meatballs, browned and then baked in a sauce of (forgive me) jarred salsa and a can of chipotles in adobo. Scatter on some cilantro leaves for pretty.

I like you guys. Thanks to you all for the perspective.

Mostly I just needed to vent, with a side order of "am I nuts, here?".

Turkey guy fancies himself a flashy cook, and also birthday girl and husband themselves are the sort who would show up at a potluck with a bag of chips and a dozen Dunkin Donuts, so he may be practicing self-defensive food socializing here.

It still seems like a lot of poultry, so I think I'm switching over to spicy sort-of-Mexican meatballs. At least, the guy who always brings the best wine is coming, so I won't end the evening unhappy.

A friend's birthday is coming up, and because of physical limitations (can't do stairs, can't walk any significant distance, can't stand very long) I volunteered my house for the party, so she could park by the back door, and only have two steps to manage.

I suggested a potluck, with me providing the space, the linens and plates and flatware, and a big pan of roasted chicken, as an entree. I'll pick up a cake from the local bakery. Her husband sent out an invitation asking for sides and salads and wine and soda, and specifically said entree only if you don't like chicken.

So I just got an email from one of the guests announcing he'll be bringing "a freshly roasted 12 pound turkey with potatoes."

I don't know whether it was the "freshly roasted" or the "turkey" that cheesed me off more, but all I can think is that's gonna be a hell of a lot of poultry.
