Franklin BBQ uses natural (added hormone & antibiotic free) beef. I don't think it's grassfed but it may be grass fed and grain finished.

"Supper" Barbecue?

Overrated. It's more about the history at this point than the food. I've gone twice in the past year, pre pants-meat, and the brisket and ribs were both barely edible.

Is all 100% grass-fed beef pasture-raised?

Almost every pastured cattle herd will be supplemented with hay. On the very best grass lands, you still need 5-10 acres per head so it's rarely feasible to have true 100% foraging cattle. They will also be supplemented with range cubes which are packed with protein and minerals to round out their diet. I would think these cattle would still be considered grass fed.

Torchy's does it. I believe you get to pick 3 tacos off the menu plus you can create and name a 4th special for your event.

I've only ever had the red ripe version. It's probably my favorite pepper right now.

NEVER EVER MIX WITH SALT. Never. Really, never do it.

Salt instantly reacts with the meat proteins and causes them to bind together. This is one of the reasons why meatloaf has that meatloaf texture. If you do it to a patty, in just a few minutes the patty will become much denser.

You should loosely form a patty and let it rest to warm up to room temp. Get the pan to temp. Salt and pepper the surface of the patty. Griddle it. never press it. Turn it once. Eat that mother.

Soy Sauce

I say go with the dark. It's worth the extra boldness. It's so far beyond the typical soy sauce brands, I think I'd stroke out if I had one better that Pearl River Bridge dark soy sauce.

Best substitution for canned tomatoes in chili: tomato paste? puree? sauce?

Authentic chili doesn't have tomatoes (sauce, diced, or otherwise) so leave it out.

"Breakfast" around the world

About 5 days a week, breakfast tacos. My favorite is chorizo, egg, and potato on homemade flour tortillas.

On weekends, it's migas. Fry up some chorizo with diced serranos, onion, and tomato. Add some tortilla chips, scrambled eggs, and some cheddar cheese. Food of the gods.

Sprouts closing most stores

A coworker bought some beef there that was labeled as being sourced in the USA but he pulled of the sticker and it said "product of Paraguay".

BBQ Sauces?

The only bottled sauce I'll buy is Fredericksburg Farms' Texas Firepit Bar-B-Q Sauce. It's not sweet and is a bit spicy. You can get it at Central Market for sure.

Saigon Street Food Trailer

Yeah, I don't get the BH love on here. Finally made it there a few months ago and it was very meh. Most of their sandwiches look like something on Subway's menu and the veggie mix has zero flavor. Pretty disappointing.

Costco rotisserie chicken...why is it so good?

The Costco in Austin used to carry vacuum packed deboned rotisserie chicken meat. It was fantastic and perfect for a variety of dishes. It's been gone for about a year. Has anyone else seen it?

Favorite Taqueria Or Taco Cart For Scratch Tortillas

Tortillas in Austin proper are uniformly bad. What is it about the Travis County border that prevents those with tortilla skills from moving into town?

The best tortillas in the are are at Helen's Casa Alde in Buda and it's not even close.

Overheard that the building is leased until the spring so it'd probably be summer at the earliest before a move to the building would happen.

What's the difference in all the "Tex" foods?

Texican Cafe and Jorge's are West Texas style. The interior side of the menu at Azul Tequila and El Meson are the best interior Mex places. Aranda's is best for Jalisco style Mex. For Tex Mex, I like La Reyna on S 1st.

BBQ Beef Ribs

Had the beef ribs at JMueller yesterday and they were great. They're short ribs so they're the meatiest beef rib. They're huge so 2 will set you back $12.

4 days: tacos + chilaquiles + brisket with a 2 yo; pls review the plan so far

Great BBQ is not out. Franklin and JMueller are both in town and are better than anything in Lockhart and Luling. Snow's in Lexington is the only one that's comparable. The Lockhart and Luling joints have been really inconsistent in my dozen or so visits this past year.

any early reviews of J. Mueller's new 'cue?

I went today also. The line was 20 deep but moved really quick. The moist was top notch as was the sausage. The sauce is more like a sop, which I grew up on, so I like it a lot. I feel little need to wait two hours when I can pull up and eat within 15 minutes. I would personally park in the hood until the building is done. Quite a bit of parking will free up when that happens.
