Wonderful post. You don't have to go to India to help the homeless and hungry. I've been volunteering at the local Salvation Army kitchen for years. You don't have to be a master chef. Communities work best when people get involved.
Best fried clams in New England
I just had the best fried clam roll I have ever eaten, and I've eaten a lot of fried clams. This is in Scarborough, Maine. The restaurant, in business since 1927, is Ken's Place, on Pine Point Road. The menu is extensive, but what my mom and I , landlocked far too long in Vermont, wanted was clams. We split one roll, at around $l0 (market value). The roll was bulging with clams - maybe 30 of them, the whole ones. They were small-average size. We were asked if we wanted them crisp or doughy (not the right word - but with more batter) - and we chose crisp. The clam morsels were not at all greasy and as fresh as I've ever tasted. They were sweet, no grit, no sand, no toughness. I would gladly drive back the 200+ miles to have another taste of this clam roll. With it, they served commercial tartar sauce. So, the only thing I would change would be homemade tartar sauce, but this is hardly worth mentioning. In our three-day Maine vacation, these clams were the best thing we put into our mouths. Nitrites and nitrates are different. The chance of botulism is very small, but do you really want to take a chance with a deadly nerve toxin?

Michael Ruhlman, in Charcuterie, recommends a wet cure with spices, salt and pink salt which is a nitrite mixture to prevent botulism and other badies. Then a dry cure in a cool, dark, humid place for a couple of weeks to cure pork belly. Light also harms fat. Personally, I wouldn't take chances with something that could kill me.
What's The One Thing You Can't Eat, even for money.
A few Christmasses ago a British friend came over with a traditional English Christmas treat, canned smoked oysters. Of course we had to eat them or offend our friend. It was one of the most disgusting things I've ever put in my mouth. My poor wife wound up gagging them up in the toilet. Never again.

My dream kitchen is any kitchen where someone else does the dishes.
But seriously, a gas stove that has a really high flame and a really low flame. Too much work space (can't happen). A pantry. When we renovated, I found a used restaurant chargrill for a couple of hundred and that has been alot of fun, especially in winter. You must have a good exhaust system and a source of outside air to feed it.

I was there for the Bite Club also. The owner was incredibly generous. All the food was very good. Although I don't think they can beat Big Fatty's ribs. So much piggy goodness.

Unfortunately, yes. Dinner for two with drinks runs over $100. We've taken to going out for lunch instead.

Wild Mushrooms Looking for a Field Guide
I believe in France pharmacists are trained to identify mushrooms. So after you pick you get a confirmation before you eat. At markets in the country people selling wild mushrooms will have a sticker on each package signed by a pharmacist.

The summer 2006 issue of Gastronomica (http://www.gastronomica.org/) had a wonderful article and recipe for making masala dosa (The Masala Dosas in My Life | Ramesh Avadhan). Unfortunately, the article is not available online but you can buy back issues there.
What 's the wierdest recipe you have found and would you attempt it?
After my mother passed away I was going through her recipe box and came across a recipe, clipped from the newspaper, for "Liver and Bananas." I consider myself an adventerious eater but I have not been able to bring myself to try it.
The current issue of Gastronomica has an article on a restaurant in Beijing that only serves penises and testicles...

If you have a heavy duty exhaust fan you have to have a supply of fresh air available equal to the amount you will exhaust or it won't work. Try opening a window or door.
Home Sausage Making
Ruhlman's Charcuterie is a wonderful book to have anyway. His chapter on sausage is well done. I would also recommend: "Home Sausage Making" by Susan Mahnke Peery, Storey Publishing, 2003. "The Art of Making Sausages, Pates and Other Charcuterie" by Jane Grigson, Alfred Knopf, 1976, out of print but you can probably find a copy on line. The "Chez Panisse Cafe Cookbook" also has some very nice sausage recipes.
Sausage making is fun, economical and you can make some really good eats. Have Fun!

Sorry, don't remember the name of the place but it was a mom and pop operation whose name had been mentioned somewhere else. The person answering the phone was completely clueless and had to keep going off to talk to someone else.

Where ever you buy it, make sure it is not hydrogenated. After trying to order some from a source in Pennsylvania they admitted that they buy 55 gallon drums of hydrogenated lard from Hormel. Yuck.
I finally found a source for unrendered pork fat at a Italian food store in Montreal.
