Menu help for rosh hashana travel

Going away for RH and need to come up with one lunch and one dinner to take along. Cannot cook there, i prefer to serve at room temperature. Any ideas?
I'm thinking to make the dinner meat and the lunch dairy, but flexible (like a london broil for dinner and salmon for lunch). TIA

Def mozat - used to flavor bean or vegetable dishes. Very rich flavor but needs to be slow cooked, like a braise.

Why don't Jews eat cheese?

I don't think anybody makes baked ziti with fancy cheeses for their kids - including non Jews. Fancy cheeses are sered as a separate course in a meat meal and one just takes a nibble. Jews cannot incorporate a nibble of fancy cheese into a meat meal and therefore buy less artisanal cheeses.

Protein snacks to eat in the office - ideas needed

My mom makes long meatballs in the shape of kebobs and fries them. They are a great snack or meal. Freeze well pre or post frying. Can use them in sandwiches too.
Also, schnitzel, little homemade chicken nuggets or schnitzel strips - yum!

Clearly there are many kosher places in this area. I'm looking for something like sephardic home cooking. No kugels, no soggy vegetables from frozen bags. Fresh ingredients, freshly prepared. Any suggestions?

How do you take your hard boiled eggs (when you eat them as-is)?

I like them plain with salt and pepper.
Like them better with a cucumber on the side.
LOVE them in a pita with thick tehina and fresh cucumber. Great sandwich for road trips.

I left out the oregano (I just don't like it) and added lots of wine. I also used the canned fire roasted tomatoes. This recipe is outrageously good. I will definitely make it again.

Aside from a salad, asparagus is my go to lunch veggie, but it's not in season now, so too expensive. Steamed sugar snaps are also great. And brusslebsprouts hold up fine.
You can make a carrot salad, celery salad, roasted peppers, fennel salad(not colorful, but good), or red cabbage salad. Etc.

Reporting back- the party is over and it was a huge success. Thank all.
Hanale, thanks for the pulled brisket sliders idea. They were fantastic and the biggest hit of the night. I played with the recipe a bit, but it's a great one and I recommend to all.
About the slider buns: I called Pomegranite a couple of times and was assured that they have them. I schlepped my poor husband all the way there, and of course, they didn't!! Park East was the answer. Their sliders were good. I would have liked more of a dinner roll type of bread, and these were real buns(that were very fresh, unsliced) and turned out to be perfect. Thanks Park East.
I also made leek pancakes, adapted from Aromas of Aleppo, but I use less eggs and add a little flour. I tried to make them on the small side. I fried them on argues day night for Saturday night and just heated and the oven. They were devoured!
My potato Bourekas are the size and shape of franks in a blanket. Enough said.
I bought mini koube in kings hwy and served with tehina.
For fresh vegetable, I made a "salad on a stick" cucumber, red pepper and cherry tomato on a toothpick standing up in pretty rows.
