Problems clicking on a thread
It's been happening to me too, for about a week, in the same way others have described. It is more likely to happen with a thread with a lot of posts, but the last time it happened was when I clicked on this thread just now. Mac OS X / Safari.
Anywhere in the DC/Bmore area that's like Amsterdam Falafelshop but with Meat?
Shawarma King? I haven't been in a couple of years, but when I went, I thought it was pretty good - not worth going way out of your way for, but good. The owner was very nice and talkative.

I agree with all the recommendations you've gotten so far.
Eastern Market is fun on a Sat. morning. Half smokes are a DC thing: I like the hot half smoke in natural casing that you can get at the meat market about half way down. You apply your own condiments and eat standing up for $2. The original Peregrine Espresso is nearby - great coffee. You can also get alcoholic milkshakes on 8th St. at Ted's Bulletin.
Rasika would be a great place for you to go. It's a very inventive and modern take on Indian food - very unusual. If you go, don't miss the palak chaat. I like uhockey's write-up about it here: http://uhockey.blogspot.com/2010/05/baked-and-wired-and-rasika-washington.html You could start at the Passenger for a drink, then walk down 7th St. to Rasika. You will pass lots of places, including TangySweet yogurt, one of my favorite stops.
Don't miss Churchkey for the best beer selection in town. Going there puts you in a neighborhood with great eats: Birch and Barley, Pearl Dive Oyster Palace, Estadio, Cork Wine Bar (for your wines by the glass), Peregrine Espresso, and others. You could also walk up 14th to U St. and turn right, then walk a few blocks to Etete for dinner.
For wines by the glass and excellent food, Proof gets a lot of positive comments on this board (I haven't been yet.)
H St. NE is another good neighborhood where there is a lot going on. I like Granville Moore's for moules and frites and a good Belgian beer selection. The Argonaut is a nice bar over there. There is a hole in the wall that sells water ice that I like as well.
"Newest and best" sandwiches in town would be at Sundevich, near 9th and N NW. A few interesting places have popped up in this area, including Seasonal Pantry and Rogue 24.
That's about it off the top of my head. You are doing great research and will certainly enjoy your stay!

I love Hank's. I guess "walking distance" is relative, but I would consider Hank's to be rather a long walk from the OP's hotel.

I like Sichuan Pavilion too - especially because they deliver to the office. For ma-po tofu though, I prefer Great Wall on 14th St.
I agree with hamster that SP is not as good and more expensive than Joe's. No comparison, really. But if you are in DC and especially downtown DC, SP will work. All things considered, I still would prefer Great Wall over SP though, as GW is a pleasant casual little neighborhood place, as opposed to SP which is a "downtownish" place. So choose between the two based on location and level of preferred formality.
Near Fairmont Hotel, Washington, DC
RIS and Blue Duck Tavern are both very good and very close. I prefer the former.
Burger, Tap and Shake would be good for lunch. It's right at Washington Circle.
Looking for dinner that specializes in adorable, miniature, tiny, or bitesize in DC
Rogue 24 comes to mind. All of their courses are 1-3 bites and stunningly beautiful.

Great places near Washington Hilton?
Check out Bistro du Coin near you. Good mussels and salads. "Not too expensive" is subjective, but there are ways to order here that won't break the bank.
For Vietnamese/pho, you need to choose - you either want to eat near your hotel, or you want to travel a bit for this kind of food. My favorite place in town is Pho Viet, a small family run place on 14th St. about 6 blocks north of the Columbia Heights Metro station. You could take the Metro to get here, but you'd need to change to the green line at Gallery Place.
Same for tapas. Two good places are Jaleo and Estadio. Jaleo would be easy to get to on the Metro. Take the red line toward Glenmont and get off at Gallery Place. It's a block or so from there. Estadio is excellent; it's on 14th St. near Logan Circle - a long walk, but do-able - or take a taxi. It's rather expensive.
There are a couple of excellent burger places near you. Shake Shack, south of Dupont Circle on CT Ave., and BGR, closer to you and north of the circle. Oops - you said no chains.
Great breakfast and lunch is near you at Bethesda Bagels on CT Ave. toward the circle.
Dolcezza has the best ice cream in town. It's near you.
Unfortunately, you are in an expensive area of town looking for inexpensive options close by.
Tater Salad: How Do You Take It?
I like a combination of mayo and Dijon mustard - much more mayo than mustard, of course. To me the key to good potato salad is to pour over the roughly chopped HOT potatoes a mixture of olive oil and vinegar, salt and pepper. I like a lot of chopped hard boiled eggs, celery and parsley in it too. My favorite recipe is the one from the Silver Palate cookbook, with cucumber left out.

fishie: It took me nearly 3 years to follow up on your suggestion to check out Cindy's. I did so this weekend - twice. Loved it -- "Unpretentious and fresh" is right. Their oyster stew is out of this world - some of the best I've ever had - and we also loved the "barnyard burger" - chicken, ham, bacon, homemade BBQ sauce, lettuce and tomato. Their breads for their sandwiches are excellent, and they are nicely toasted. I plan to stop there many times this summer and work my way through the menu. It's conveniently located and is open on Fri. till 9:00 and on Sun. till 8. On Fri. we talked with Elton the cook, who is a Viet Nam vet who cooked in the navy. Great guy who enjoys what he does and is good at it. He also makes a large variety of cakes, pies and baked goods and he caters.

My new favorite cheap eats place (cheap for DC that is) is Sundevich - a great new sandwich place on 9th St. It's a really cute place with fantastic sandwiches. Unless you are starving, one sandwich could feed two people.

Help a poor Los Angeles hound visiting Baltimore and DC
I went to one of these events once. I love the concept of it, but the execution is a different matter. All the trucks I was interested in had massive lines - at least 50 people in each line - and the lines weren't moving all that quickly. I gave up and left. This may not be practical for an out-of-town visitor - especially for one from a place where food trucks aren't a novelty.

I tried the Pizza Empire in Denton. It was VERY lame compared to the original in Henderson. They are serving a completely different product. I won't be back to the Denton store again.
