old vanilla beans

i found some old vanilla beans, over 2 years old i think. they're a littile dried out but smell nice. can i still use them?

ScoopG, question about Pork Cheeks - any oriental recipes?

yes, it's a vietnamese recipe...i usually just sear with garlic in oil then add coconut water to cover and add fish sauce and sugar to your taste...it should end up a little caramelly but the sauce is stil on the thin side.
you can also add a couple of peeled hard cooked eggs at the end for 10 minutes to pick up the flavoring of the sauce.
i also use this recipe on pork belly or pigs feet.

i've braised them into melting deliciousness in coconut water, brown sugar, garlic and fish sauce. also braised them in soy sauce, brown sugar, star anise, cinnamon, clove and garlic.

disguising butternut squash

i've used mashed leftover butternut squash in mac and cheese...the color works perfectly. also used it in a basic yellow curry with whatever protein i have on hand with peas, carrots and potatoes..tastes great when it blends into a thick sauce.

Ambergris Caye, Belize?

hubby and i a couple of really good dinners at elvi's kitchen in san pedro. we were their for a mayan feast buffet one night.
also had a nice, on the pricey side, dinner at mambo at the mata chica hotel/resort. we had to take a water taxi there.
can't remember the names of the places we had lunch on the beach but here's a couple food bits:
-shrimp burger is just a pile of shrimp on a hamburger bun, good but not expected
-fry jack? fried bread was a yummy snack/breakfast item
-fruit smoothies were all fresh and delicious
-ceviche was huge portion of seafood with onions and peppers on a plate, enough for a lunch meal, really tangy and refreshing
-got bbq & peas'n'rice off the streets that was pretty good near the basketball court in san pedro
enjoy.

Chinese Stir Fry 'Sauces'

if using it straight is too pungent, you can thin it out with some veggie stock or water. make sure you add a pinch of sugar to balance out the saltiness...this makes a huge difference.
for a slight variation, use half soy, half veggie oyster sauce...and pinch of sugar, of course.
a splash of sesame oil to your stir fry will add great flavor to veg dishes

I agree with Nyleve...roasting,adding herbs and dried or fresh mushrooms for more of a meaty taste. You can also use some soy sauce and drizzle of oil to get a more full-mouth feel/taste.

Butterflied Chicken

i've done the butterflied chicken over onions and any available root veggies also. just toss the the cut-up veggies in a little oil and chopped herbs. i love that it all cooks a quicker than roasting a whole chicken.

hmm, curious...what was bland? i've had the opposite experience here many times..super-tasty chow...their rice paper rolls with peanut sauce are one of the tastiest i've had in outside of vietname. includes extra herbs and, i was told, a housemade garlicky sausage...soo good, i never want to share it.
jsmitty..just do a search...there have been some recent chowhound reports on this spot.

mix with orange marmalade, marinate chicken legs or thighs overnight. can be baked or grilled on bbq. this is actually a recipe from rocco dispirito's cookbook...the only one i use..it's really easy and delicious.
