I recommend trying Crisp (http://www.crisponline.com) on the 2900 block of Broadway. They offer 5 yummy styles of Korean and American wings, as well as sandwiches, sides (from kimche to fries), rice and meat plates and Buddha Bowls featuring tasty Korean vegetables with rice.
Pho in the Loop?
I crave this stuff for lunch all the time, but I'm unaware of any Vietnamese eateries in the Loop. It seems that pho is a natural lunch dish, but I can't seem to find any and it's driving me crazy, so if anybody knows of any places - particularly on or around LaSalle (i'm at LaSalle and Madison), I'd be most grateful to hear about it. I've been asked to cook a goose for Christmas this year and am wondering where might be the best pace to procure one. I know Treasure Island has frozen ones and Whole Foods sometimes sells them during Holiday season. Does anybody have any other/better ideas?
Two other questions: does fresh v. frozen make much of a difference? Also, does one brine a goose like a Turkey?

Yeah, that's the thing about these upper-scale, high quality butchers - nothing is a bargain. You want to make some demi-glace or some stock, and the next thing you know, you're $30-$40 in the hole.

Roast Chicken quandary
Hi folks,
I'm on what seems to be a lifelong quest to produce a perfect roast chicken (I roast probably at least one a week), and while I come very close on many occasions, I seem to always have a problem producing and maintaining crispy skin. Even when skin is crisp as bird comes out of the oven, it usually gets soft while resting, as I make jus or whatever. Anybody have any tips or suggestions? Thanks.

Where to go for Italian on the Northside?
Hands down, my recommendation would be Terragusto Cafe at 1851 W. Addison, just west of Wrigley Field. It's super authentic, they make their own pasta fresh daily and meals are prepared with fresh, local, organic produce, meats and cheeses. Also, it's byob, so you won't spend a fortune on wine. No need for valet as street parking is readily available.

Moving to Lakeview...where to eat?
Yoshi's Cafe (www.yoshiscafe.com) at 3257 N. Halsted has been around for 20 years and serves immaculately preprared imaginative Asian and American cuisine. It's a bit of splurge (but casual), but it is fantastic, both for lunch, and especially for dinner.
Another nice place is Erwin Cafe at 29?? Halsted. Great, no-frills contemporary American cuisine. www.erwincafe.com.
Finally, for super, authentic Italian hop on the 152 bus and go west (about 10 minutes) on Addison to Terragusto Cafe. Small byob that makes their own pasta fresh daily - superb. www.terragustocafe.com
Hazan's tomato sauce with onion and butter
Exactly - this dish is all about the tomatoes. If you love tomatoes and use high quality tomatoes, this simple dish will be divine. I always used fresh ones and have excellent results every time.
Basmati Rice - Help with Cooking
1.5 cups of water (or slightly less) to 1 cup of rice. I find that most rice available in the U.S. these days does not need to be rinsed or soaked. I also toss the rice with a dab or two of melted butter before adding water, and another dab or once it's done. Results (using my little rice cooker) are excellent.

Really, Really Easy Indian?
The next time you can hit up an Indian grocer, look for little boxes of spices under the brand name "Shan" - they produce them for every conceivable Indian dish from chicken tandoori and butter chicken to biryani and jalfrezi, and they're fantastic. Unlike seasoning packets and simmer sauces made for American and British consumers, they are made by and for South Asians so flavors are super robust and authentic.
Farmers' Markets and CSA
There are loads of farmers' markets which other folks have pointed out - information can also be found on newspaper web sites and the city's web site. I don't know much about local CSAs (except that they exist), but I have signed on to get weekly deliveries of organic local produce from an outfit called Fresh Picks (www.freshpicks.com), which provides produce and other goodies from a variety of farms and dairies throughout the region. I think they are more convenient than traditional CSAs in that you order and pay on a weekly basis and can order a la carte in addition to or instead of just getting the weekly box, which they also offer.
"Mom and Pop" Italian Restaurant
I recommend Terragusto Cafe at 1851 W. Addison on the North Side (not too far from downtown). It's intimate and the food is authentic, featuring fresh pasta (made daily), and seasonal/local organic produce and meats. It's BYOB ($2 corkage fee I think). www.terragustocafe.com

If you're in the Lakeview/Wrigleyville/Roscoe Village area on the North Side, I recommend Terragusto Cafe at 1851 W. Addison (http://www.terragustocafe.com/). It's a great, small BYOB serving very authentic Italian cuisine featuring fresh pasta made daily, local organic ingredients, etc.

The New Food Network Shows for This Year
I'd really like to see more programming that introduces American to the fantastic eats that one finds beyond our shores. From Singapore and Indonesia to Lebanon and Argentina, there is so much fantastic food that many Americans are almost totally unaware of and it's a total shame that the Food Network does virtually nothing that encourages American eaters and cooks to expand their culinary horizons. Instead we're stuck with innumerable dopey reality shows and yet another Bobby Flay grill program.

At Spiaggia you'll get world class food for world class prices. If want something a little mosre casual, try Terragusto Cafe (www.terragustocafe.com) not too far from WRigley Field. It's a byob neighborhood joint featuring superduper locally produced organizc ingredients, fresh pasta made daily, super authentic etc.
For dogs, their are lots of places and I can't remember all of them, but one place you surely won't find the best Chicago dogs is Wrigley Field itself.
