some issues about mario batlai's lobster risotto
Yes, you definitely want to use a light stock with the risotto, but I agree that the recipe seems a little much in terms of water & timing....
I suggest a couple of options:
1 - In a stock pot, saute mirapoix until translucent, then add the lobster. add enough water to cover the lobster. Bring to a boil and then simmer for 1 hour. That should extract enough good flavor for the risotto and yet not overwhelm.
2- You could grill the lobster. This will bring out a little carmelization and intensify its flavor. Then follow the method I suggested in #1.
