I use mine for baking: mixing European sourdoughs and pie crusts....and pesto, on occasion. But that's it.

Beef short ribs...you can make a ton and they come out perfect every time. Ina Garten has a great recipe that's easy to throw together.

Where Can I Go to Learn Knife Sharpening Skills?

It's hard. I would just find a knife-sharpening biz near you. I found one in NJ. $3 per knife/once a year. In between use I use the ceramic-thingy to take off the rough edges...no angst and no worries about ruining expensive knives.

Problems w/ Ina Garten's chocolate cake recipe?

FYI, I used Penzey's Cocoa Powder, but not their Dutch Processed Cocoa Powder...gave it a wonderful flavor.

I love Ina. Her food is like her: warm, friendly, unpretentious. Just bought the new Back to Basics and have made the Chicken Bouilliabaisse, Coq au Vin, the Pomegranate Cosmopolitans, the roasted fennel/asparagus/green beans, all phenomenal. Certainly nothing I could/would have dreamed up myself. Next: roasted pears w/ blue cheese, walnuts and dried cranberries to put atop dressed arugula. What's not to love? Hers are the only cookbooks that I return to routinely; and I have dozens of cookbooks.

What should I use to clean my pots?

I love a mixture of dish soap and baking soda. I keep the baking soda in a restaurant-style sugar shaker next to my sink. Works on calphalon, all clad, the sink and for tea stains on mugs and coffee cups...and it's inexpensive and non-toxic. I even use it on cast iron -- sans the dish soap.

Problems w/ Ina Garten's chocolate cake recipe?

Ina Garten's recipe for chocolate cake -- Beatty's Chocolate Cake -- driving me nuts. First time, cake batter bubbled out of the pans and all over the bottom of the oven. My fault, used milk w/ vinegar instead of buttermilk. But the second time still found that one of the pans ran over a bit, and then as they finished cooking they both went concave on me! I doublechecked the expiration date on my baking powder, and it's fine. Also, I found that the icing recipe barely made enough to cover the cake -- which wouldn't have been a problem but fort the concavity issue. Am assuming my troubles are of my own making/baking, but thought I'd check...BTW, the cake was delicious.

How old is too old, if you're a spice?

I've heard so many conflicting things about how long spices last. Recently received a wonderful box of Penzey spices for Xmas, but am not sure if/when I should purge the contents of my vast spice cabinet. Some are undoubtedly over a year old. Thoughts?

Are Crockpots Lame?

Slow cooker = GREAT COLLARD GREENS. Fill cooker w/ freshly-washed greens, add 1 T apple cider vinegar, a half cup of chicken broth, one quarter cup chopped onions, one smoked turkey drumstick, salt, pepper and red pepper flakes. Cook on low for 5 hours. When done pull turkey meat off bone, shred and mix into greens. An exceptional recipe from a friend's grandma.

Fried Chicken for a Big BBQ

I want to fry enough chicken to feed about 15 to 20 people for a summer BBQ. Anyone have suggestions how to pull it off? Am told it can be served at room temperature, but am trying to figure out how to fry it. Have access to a turkey fryer, but can't find any info. on how much chicken to put in at one time and how long it would have to cook. Am envisioning pieces of chicken, not whole birds. Anyone have any suggestions??? Thanks.

How to Clean Hard Anodized Cookware's Exterior

I absolutely agree about the oven cleaner. I tried on a really messy roaster pan a few years ago and destroyed it! The Comet cleanser works really well, but not on everything. But I do love those pans. I look at the blemishes as battle scars, proof that I really cook.

Favorite Barefoot Contessa Recipes?

I've made her Outrageous Brownies a number of times, and everyone loves them. Just made the roast chicken w/ veggies, but found the veggies from the bottom of the pan pretty greasy. Her chicken potpie is fabulous.

spaghetti squash?

I bake or steam mine in the microwave, scrape out the pulp into a deep baking dish, cover w/ homemade vegetarian chili, and top with a layer of Jiffy cornbread mix, and bake. If you want to get fancy, add some shredded cheese and/or chopped jalapeno to the cornbread mix.

Solve my lentil problem

This is true. It happened to me. You're supposed to add the salt at the end. JJO, could that have been the issue? I've never heard of old beans not softening, I've just heard that old beans take on a wrinkled appearance.

Pizza Dough Reeking of Yeast

get a copy of Charlie Van Over's The Best Bread Ever. He's got a starter that you keep in the refrigerator. You feed it a few hours before you want to use it. AND the best part is that all of his recipes call for mixing the dough in a food processor, which makes it a painless process. If you want real flavor, retard the dough in the refrigerator overnight. An excellent book.

simple, easy way to spruce up haricots verts?

slice and brown a couple handfuls of shallots in butter, add some saki or white white, and the verts. salt and pepper.
