Good cookie, bad cookie

Wow, I can't believe their hasn't been a post about Pacific Cookie Co. since 2002. Where are all the cookie lovers? I try cookies everywhere I go and I now will only try a store made cookie if it looks similar to a Pacific Cookie Co. cookie. Though a couple have come close nothing has been as good (at least for me) as a Pacific Cookie Co. cookie. They are so good that after years of only eating their chocolate chip and chocolate chip varieties cookies, I tried their Lemon Drop and was absolutely blown away. Now I enjoy all of their cookies. If you are a snickerdoodle fan, you'd best check theirs out!

Guacamole

I never add tomatoes to my guacamole. Why? Because when I am eating guacamole I am also usually eating salsa. Plus, I feel they don't really add flavor, just color. I use shallots instead of onion, jalepeno pepper, cilantro, lime juice, a little cumin and a little minced garlic or garlic powder. For enough for 4 to 6 I use 3 avocadoes, mashing one and roughly chopping the other two.

Belgian Chocolates

I couldn't agree more with Xerius. Casteleyn chocolates blew me away. I was most impressed by their chocolate covered caramels. I have never been a fan of caramels, mostly because the texture is either too hard or so soft, the caramel drips. Casteleyn's caramels had a texture unlike any caramel I had ever had. It gently gave way when bitten but wasn't liquidy. It was perfectly creamy. Now I am even more of a snob when it comes to caramels because I know nothing will come close to a Casteleyn caramel.

Mail Order Chocolate Chip Cookies

The best commercial cookie ever!!!
I have tried several mail order and several 'mall' cookies and nothing comes close to The Pacific Cookie Co. cookie. Thick and chewy but not raw (YUK!!) on the inside and slightly crispy on the outside. I don't know how they do it but no other vender seems to be able to get that balance just right.

Corralitos Kielbasa, Capitola Hot Cross buns, Aldo’s Italian Bakery

I can't speak highly enough of Gayle's Bakery. I have lived in the Metro DC area for 7 years now and have yet to find a bakery as good as Gayle's. I have found a few 'good' ones here but none as good as Gayle's. So if any readers from the Metro DC area plan on or routinely visit Northern CA, you have to make a stop at Gayle's (Capitola, CA). I have cook book, 'The Village Baker's Wife' (unfortunately out of print) and it is one of the best books on baking that I have come across. Try looking for it at used book stores; however, I can't image how anyone who loves food and loves to bake would let this book go.
