Nothing this eps broke new ground, as far as reality competition shows ...

Project Runway has done loved one challenges for a long time.

And the no elimination "surprise" on the episode leading to final was done on Project Runway season 7. In that season, with 4 contestants left, the judges picked the top 2, but could not or would not decide between eliminating the bottom 2, so invited both create fashion week lines, and would as the first part of the finale pick one of them to join the top 2 to officially show on the finale.

Raw Milk Cheesemakers Fret Over Possible New Rules

The pharmaceutical, alcohol and tobacco industry is allowed to get away with whatever this ban is suppose to protect the public from by including a dense lawyerspeak pamphlet or sticker warning over every possible, real or imagined, side affect from consumption. My guess is raw milk groups simply don't have the money to buy the necessary political cachet to keep the FDA off their backs or working for them (as inspectors as other posters have mentioned) instead of erasing them as a inconvenient job responsibility.

Top Chef All-Stars - Ep. #8 - 02/02/11 (Spoilers)

The producers edit the episodes to make the judging seem closer, and thus more controversial, than it really is. Controversy and uncertainty drives viewer interest, which drives ratings: the ultimate objective of the producers. As a side-effect it also can create an appearance of unfair or controversial judging results.

We aren't jury seeing all the evidence and testimony. We are watching a 1:15 made for TV version.... with an agenda, of delivering eyeballs and ratings.

(just my opinion: as a voracious reality (unscripted) TV watcher over many years.)

New Yorker Article on Food Allergies (2/7/11)

very interesting. It dovetails with another theory that young children exposure to pets and playing "dirty" outdoors lowers the incidences of childhood asthma, which explains the high and increasing incidence of asthma among inner city youths who grow up in a more antiseptic environment.

Food Network Ratings Down...

I DVR shows, and only have so much time to watch cooking programs. Most cooking programs I watch are on PBS -- excepting Top Chef and the occasional ICA and Secrets of Restaurant Chef. Among those PBS I've watched Avec Eric, ATK, Lidia's Italy, Bayless's Mexico One Plate at a Time, Spain on the Road Again, Everyday Food. Julia Child. Even some Martin Yan.... createtv.com lists PBS portfolio of cooking howto shows. There are quite a large number and variety, far more diverse and "quality" than foodtv. More than enough to fill my cooking show "hunger" itch.

Unfortunately what cooking program are shown depends on each PBS station. I've got a couple of PBS channels in my area (NYC) so I get a good selection of shows.

Top Chef All-Stars - Ep. #7 - 01/19/11 (Spoilers)

Some the the recipes must have been tweaked between 1st and 2nd sittings. I noticed the diner's blog says they found, at first seating, Tiffany's runny egg salad as way too salty, to the point of inedible. When The judges tried ETCH at 2nd seating, they criticized the same Tiffany dish as nearly unsalted and underflavored!

Interesting to guess what other on-the-fly recipe adjustments made between sittings. It should actually give the 2nd sitting restaurant an advantage, as far as judge's impressions, as they have time to get kinks out of their work-flow and flavors. Though in this case the 2nd restaurant judged was losing Etch.

Thanks. Great blog entry from a voting diner. The thoughts of the blog author seems to mostly match the episode edit. It was nice where the impressions differed with the judges. And it was extra interesting it seems it was one of those who voted for ETCH (restauarnant Marcel).

Agree. I'm not so interested in watching contestants design restaurants -- that's for a restaurateur and professional designers. Just like I'm not as interested in them acting as FoH, which is restaurant manager. Both jobs may or may not be a chef's role as well, but it is not them acting as chef. Quality and timely food production and menu planning is a chef's job.

this is a game show, and a reality show (aka unscripted show). they should be excited and emotional. this isn't college chemistry lab or a convent.

think of contestants on shows like price is right, amazing race, wipeout. viewers and producers want emotional on sleeve people.

this is not real life, it is a show!

making fun of Angelo

Fabio comments about Angelo: "he wears his pants a bit too tight for me." had me noticing that Angelo does wear tight pants. I think they are called skinny jeans. You see at the farmers market he's wearing fitted clamdigger jeans, and later on he's wearing skinny jeans. Like recent beer commercials make fun of. :-P

And of course there is the scene during dinner service when Angelo ducks under the table when Mike tells him some lady fans are looking for him.

I'd say, of course. People change. Priorities change. Incentives change. Where they are in their careers and life changes. Especially when deep runs in Top Chef are such life and career changing experience, they are forced to dramatically change as persons.

And a one-off competition like Top Chef is not something anyone be primed to do well year after year. I'd actually say it would be quite unhealthy to be so OCD and hyper-competitive focus years later, as is required for contestants to have deep runs.

It really helps Angelo and Tiffany D, that they basically took a few weeks/months vacation after being strong in their own season, with no real chance to fully decompress and morph into different competitors. So they come in TCAS pretty much with the competitive spirit, mentally and physically they were in s7.

From the edit I honestly had NO Idea that Tiffani was in danger of elimination . I have to read judges blogs. What exactly was the problem with her bluefish, did she simply not prep it, and butcher it correctly?

I actual thought both Richard and Marcel could have been eliminated.

At least one of them did have experience -- Dale T. But here he lost an opportunity or worse, by not putting forth any effort to take a leadership role, or otherwise make friends and impress viewers and look good professionally, by helping everyone look better by offering some useful advise to the group as to the logistics and the different mindset they'd have to come into a dim sum kitchen with. Appropriate, considering they are all executive chefs with leadership and mentoring responsibilities, not simple line-cooks bringing the drama.

And Tiffany D did say that by the end of service they had figured the kinks out of how they needed to work to keep up the required dim sum volume, but by then it was "too late."

Disasters make for good reality TV though. And these are the "all stars", so it is appropriate to give them higher level of difficulty challenges and see how they handle it. Not so well in this case...

There is nothing crippling about ethnic food challenges.

Tiffany D has done very well on these "ethnic" challenges -- getting tops in ethiopian and indian food in her season, and getting top mention in dim sum in TCAS. So her results are no fluke.

And she isn't one with the particularly worldly food background, but she clearly has a great feel for flavors, what tastes good and the techniques to pull it off. That's what a "Top Chef" should be.

that's part of the gamemanship and strategy. Who to send up...

The way to be fair in theory fair did seem to be what original plan was, to send the weakest dish out first, and then send 4 strongest dishes. Then even if the team loses, the weakest dish was judged, and will be eliminated, and the stronger dishes survive.

But what if the weakest dish knows they are the weakest dish, and does not want to hari kari? Then it comes to "survivor" type politics... if someone doesn't want to admit they are weakest dish, (Jamie) to maneuver their way out of being judged.

Bottom line, whoever is eliminated in this format, there will always be at least 4 dishes stronger: 3 from their own team (up for elimination), and the dish they lost to. Just make one of the top4 dishes and you'll always be safe from elimination!

I found it quite interesting how it shook out...

Tiffany comments that at the end of the day, your dish is your own, are indisputable true.

For any competitor to let Angelo or any other chef help them with the heart of their dish tells me me a they already lack confidence in their dish. The act of having to lean so much on someone else, they are already seriously in the weeds, and thereby should be up for elimination. No sympathy. The other team just had better dishes. Credit to them.

I loved the EC format, i was even happy jamie "survivor-esque" villain politicking/hiding her way out of an elim, knowing they are in danger. There are so many drama inducing gaming strategy involved for teams and by individuals in the teams, plus the exciting heads-up winner takes all nature. Winners on losing team are immune, as are weak players who never come up to bat.

Or Angelo has a good samaritan nature (at least regarding food disasters) just can't help but offer to help "lost causes". He might be batting very poorly as a helper, it doesn't mean he is black widow, killing otherwise healthy dishes. He's been trying to save what couldn't of been saved... guiding a crashing car to a different crash, not steering it to crash.

whatever angelo's yuzu addition, if it was unnecessary, there seemed to be consensus the broth was good, so my take is yuzu did not hurt it, and the dish was ppyag worthy entirely because of badly done shrimp. Shrimp was all spike. Angelo, and others, knew spike's was a weak, so did try to kick it up with yuzu. Adding salt to already done, tasty broth, only makes salty broth with still bland shrimp

The gamesmanship was entirely sending spike instead of jamie. Basically the team chose who to protect: jamie or spike.

What if spike flat out refused? Maybe he did, and he got voted up to serve by his team. Possibly spike as the less likeable contestant between him and Jamie, both with the worst dish of all losers on the losing team

Props to angelo for winning his head's-up match with begged for tuna amuse bouche after deciding to not use his original slimy mackerel.
