Pesach programs under $2k per head?

We host! Four families eat here for 10 days. One family provides all the pre-pesach dinners for 3 nights, plus all matzo and a case of wine. Another does all the paper goods and a crate each of tomatoes, apples, and potatoes. Another family provides the meats and cheese (we do dairy lunches on yom tov plus most of chol ha moed) I fill in the rest. I really don't go over our usual weekly budget for food. We make everything from scratch. I love to cook, and my kids get taken out on fantastic outings by visitors while I work on the culinary logistics. I do not have a big house, but even with 5 adults and 11 kids staying here, and another family next door it works out great. this year, if the weather cooperates, we want to set up our 10-man tent in the back yard. :)

Rich, Dark Chocolate Cake

The recipe on the back of the Hershey's cocoa box is outstanding, and if you use Hershey's Special Dark cocoa it's perfect. Nice and moist with a wonderful flavor.

Preserved lemon quandary

Great with roasted veggies. I also made a cucumber, tomato, sweet onion, vinegar, oil, salt, preserved lemon salsa that was GREAT on fish. Oh, yum. Last week I marinated green olives in garlic, preserved lemon, and thyme. Also delicious.

How long does Miso last?

I bought a great big bucket of miso 2 years ago. We eat it about 1-2x/week and the bulk buy made it about 1/6th the cost. It's as good as the day I bought it!

Kosher Ethiopian restaurant in NYC/NJ area?

Yum. We adopted two of our kids from Ethiopia, and as soon as pesach was over (imagine eating nothing but tuna, egg, matzo, and veggies) I got cooking lessons from the staff. Beans and peas never tasted so good! I brought my own pan and knife and kashered the stove. They were really amused by us! I make my own injera, and it's no more trouble than making sourdough bread. Bob's Red Mill makes kosher teff flour. Oh, yum. Some of my favorite food, and it's really cheap to make.

Substitute for Sour Cream for a Meat Dish

I think it is! If I were going to make cream cheese from that recipe, I would jst let it drain overnight. :)

Substitute for Sour Cream for a Meat Dish

Pareve sour cream is really easy to make: 1 package silken tofu, 1 tbsp rice vinegar, 1 tbsp lemon juice, 1 tbsp apple cider vinegar, 1/2 tsp salt, 1/4 cup oil. Puree, then gradually add 1/2 cup oil. Incredibly good, and much cheaper than the sour cream substitutes at the grocery store.

Okra - minimizing the slime

Roasted is the way to go. I've been living almost daily on eggplant, okra, tomato, onion, and garlic all roasted together. Heavenly! :) No sliminess.

$10 meals, can we make a list?

Only once a week do I spend $10+ on a meal for our family of 6. Homemade veggie burgers on homemade buns with all the fixings only cost about $0.40/each. There is a huge variety of recipes possible. Bean-based meals are ridiculously cheap. Also, you can make a nearly free meal from a roasted chicken carcass. Put it in the crockpot overnight with just water and it makes a delicious broth. Add beaten eggs for protein, grains if you want the carbs in it too. That might cost $1.50 if you add in 2 eggs per person. Bean tacos are also crazy cheap.

Scallions: my favorite "new" ingredient

You can also put the root ends (after using the tips) into a little dish of water and they'll regrow. :)

Wrap them in a damp paper towel and they'll keep for quite a while.

Myrtle Beach Supermarkets that have kosher (frozen pizza?), name and number of kosher market

WOW! Was Little Israel a shop separate from the meat restaurant??? That's a change from when we were there. :)

Myrtle Beach Supermarkets that have kosher (frozen pizza?), name and number of kosher market

When we were there a year+ ago, the meat restaurant had a small grocery section. I know they had lots of Israeli dry goods, some great cheese, and probably other things in the fridge section. I think it likely they had meat, but I don't remember exactly what. The separate kosher market was no longer there. Chabad will have the info, since it's all run by them.

Side dishes that go with texas chili on shabbos lunch?

I love to make a cabbage/cilantro/lime juice/salt/oil slaw to go with that kind of food. It's best served immediately, rather than marinated a little.

I LOVE pea shoots. Raw, anyway. If you cook them, they get tough and stringy... :)

I always like rice milk in mashed potatoes. We make our own soy milk now, though, so I never buy rice milk. I like mashed potatoes with just some water and Earth Balance mixed in.

Forget Tofutti! Here's a GREAT pareve sour cream recipe:

1 package silken tofu
1 tbsp rice vinegar
1 tbsp lemon juice
1 tsp apple cider vinegar
1/2 tsp salt
1 tsp sugar
1/4 cup oil

Purée it all in the food processor.

We've come to actually PREFER it to dairy sour cream. :)
