Desserts using St. Germain

I'm making a birthday cake around a St. Germain theme. My plan is to use lychee in the cake and make a marshmallow/white wine fondant. I'll let you know how it works out. I don't know that I've ever eaten an elderflower, but having a sip of St. G, it definitely hit me as lychee.

Maple Ice Cream

Strangely, I couldn't find a good tutorial, but here goes from memory:
1 Big bucket
1 smaller bucket that's metal

Put ice and salt into the big bucket and them seat the metal pail in the ice bath. Put your ingredients into the pail and stir every few minutes until the entire mixture is uniformly ice-creamed.
Over stirring will inhibit the freezing
Under stirring will lead to ice crystals being too large.
