What to eat with d'Yquem?

I was gifted a bottle of '05 and would like to share it with family and friends. I'd like to make a series of small bites including a torchon of foie and some roguefort or maybe proscuitto de parma since sweet and salty is always good. Any other ideas would be greatly appreciated.

Anybody used the French Laundry cookbook?

I think if you use his cookbook as a starting point, but many of the recipes are very involved (not so much in ingredients but in execution). But, for example, I have made his salmon tartare but the cornets he serves them in are way too labor intensive for me. And I can't imagine hanging a torchon in my frig overnight (though eating his foie gras is like eating velvet!).

It might be Laurie's Candies on Berdan Ave in Wayne. She makes all her chocolates and they are great ( we're partial to the drk chocolate orange peel). And her store has been there for a while.

Where can one get decent steamers in No Jersey?

Just had lunch at Legal, Short Hills. The steamers (ipswich of course) were delicious. Served in a bucket with drawn butter and clam broth...perfect!

ISO delicious, easy-to-make, high calorie soups for a person who's ill

This is easy as can be, fattening and so delicious. Put 6-8 marrow bones in a large soup pot. Add a bag of lentils, 2 carrots, coarsely chopped, 2 celery stalks, coarsely chopped and 1 whole onion, coarsely chopped. Cover with water. Bring to a boil then simmer for about 3 hours. Add salt and pepper to taste. I's even better the next day. The marrow just "melts" into the soup. Hope your friend's relative is feeling better.

HELP! Passover Brisket techniques

I don't use a slow cooker but I cook it for 4 hours at 350 in a regular oven so it should be quite a bit longer in a slow cooker. Yes it is definitely better the next day and you should slice it while it is cold (across the grain) before reheating (eveyrthing together in one pan is fine).

Passover Menu Advice

Almost. I use canola oil (or veg oil) instead of margarine and I add some sauteed onions (nicely caramelized) to the mashed potatoes. I'm not one for freezing, but these would probably freeze well. You can easily make them ahead of time and just reheat the night of the seder. They are really good and go over very well.

Pumpkin Flan
2 c sugar
1 1/2 c hvy cream
1 c milk
5 lg egg plus 1 yolk
15 oz can pure pumpkin puree (not pie filling)
1 tsp vanilla
1 1/2 tsp cinnamon
1 tsp ground ginger
1/4 tsp freshly ground nutmeg
1/4 tsp salt
For caramel: Heat oven to 350 degrees. Place a 2 quart souffle dish on the middle rack to heat up as you prepare the caramel.
Cook 1 cup sugar in a dry heavy stockpot over medium heat, untouched, until it begins to melt. Continue to cook stirring occasionally with a fork until the sugar melts into a golden caramel. Pour the caramel into the heated dish and swirl to coat bottom, then let harden.
Flan:
In a 2 quart hvy saucepan bring milk and cream to a boil. Remove from heat. Whisk together the eggs, yolk and remaining sugar. Add the pumpkin, vanilla and spices and mix to combine. Add hot cream in a slow stream, whisking. Pour custard through a fine sieve into the prepared souffle dish. Bake in a water bath until golden brown and a knife inserted into the center comes out clean, about 1 1/4 hours. Transfer to a wire rack to cool, then chill, covered, at least 6 hours.
To serve:
Run a knife between the flan and the side of the dish to loosen. Place a platter on top and then invert (caramel should pour out over flan).
Enjoy!!
